Unicorn Sweet Potato Toast Recipe
Welcoming in a new month in spring with this colorful lil’ superfood sweet potato toast recipe. It’s been so fun creating new dishes and seeing Noa’s eyes light up when we offer a little bit to her. She was in love with this unicorn toast goodie.

This special #ToastTuesday creation in our sweet potato toast series is full of delicious superfoods, gut-supporting probiotics, and topped with organic strawberries and bee pollen. Your kiddos will eat this one up and not even notice they’re eating a sweet potato!
Gather This:
1 sweet potato slice
1 tsp turmeric
1 tsp Green Dream Superfood + Protein Blend
1 tsp Berry Bliss Superfood + Protein Blend
Siggis Yogurt (we used plain) or dairy-free yogurt of your choice
Sliced strawberries (cut out shapes optional but recommended!)
Bee pollen
Do This:
Slice your sweet potato and cook in the oven at 450° for 18-22 minutes, flipping over halfway through. In one container, mix a bit of the yogurt with the turmeric for one spread. In another, mix yogurt with Green Dream and combine Berry Bliss and yogurt in another. Once your toast is slightly cooled, spread on the three different colored spreads in fun stripes. Cut out star and heart shapes out of your strawberries and place on top. Sprinkle on some bee pollen and eat up!
