Whether you're doing a Philosophie Reset or just want to cook up a simple and nourishing supper (that will also make a great next-day lunch!), try preparing this easy and savory baked potato with broccoli and superfood topping!
Gather This:
4 small russet potatoes (about 1 ¼ pound total)
1 tbsp finely chopped chives
½ cup nonfat Greek-style yogurt or ⅔ cup regular, plain nonfat yogurt
1 tbsp olive oil
1 tbsp Green Dream
2 cups broccoli, steamed and chopped
¼ cup shredded sharp cheddar cheese, separated
Do This:
Preheat the oven to 400℉. While the oven is preheating, puncture potatoes multiple times with a fork, and bake in the microwave on a plate for 5 minutes on high, then flip them and cook for another 5 minutes. Cooking times will vary, so just cook until soft.
Once potatoes are cooked, slice them in half lengthwise. Place alongside each other on a greased baking sheet.
In a bowl, add the chives, Greek yogurt, broccoli, Green Dream and about half of the cheese, and stir well to combine.
Once the broccoli mixture is well combined with a mashed potato consistency, scoop out the mixture and evenly divide it onto the potatoes.
Evenly sprinkle the remaining cheese on top, and bake for about 20 minutes.
