Savory superfood recipes don’t have to be completed! Our mission at Philosophie is to turn all your favorite meals and dishes into superfood recipes. This is the perfect time to revitalize and restore your body and spirit with the power of nutrient-dense, raw & organic superfoods.
An oh-so-yummy way to do so is by infusing your dinners with Green Dream – our detoxifying blend of spirulina, maca, mesquite, hemp powder, chia seeds, and vanilla. Whether you're doing a Philosophie Reset or just want to cook up a simple and nourishing supper (that will also make a great next-day lunch!), try preparing this easy and savory baked potato with broccoli and superfood topping!
4 small russet potatoes (about 1 ¼ pound total)
1 tbsp finely chopped chives
½ cup nonfat Greek-style yogurt or ⅔ cup regular, plain nonfat yogurt
1 tbsp olive oil
1 tbsp Green Dream
2 cups broccoli, steamed and chopped
¼ cup shredded sharp cheddar cheese, separated
Preheat the oven to 400℉. While the oven is preheating, puncture potatoes multiple times with a fork, and bake in the microwave on a plate for 5 minutes on high, then flip them and cook for another 5 minutes. Cooking times will vary, so just cook until soft.
Once potatoes are cooked, slice them in half lengthwise. Place alongside each other on a greased baking sheet.
In a bowl, add the chives, Greek yogurt, broccoli, Green Dream and about half of the cheese, and stir well to combine.
Once the broccoli mixture is well combined with a mashed potato consistency, scoop out the mixture and evenly divide it onto the potatoes.
Evenly sprinkle the remaining cheese on top, and bake for about 20 minutes.
