Spiralized Zucchini with Avocado Pesto Recipe
I ♥ spiralizing veggies with my kiddies, and crisp summer zucchini especially makes a wonderful “pasta”!
If you pair the zucchini noodles with this Green Dream avocado pesto, you’ll end up with a fast, raw, gluten-free, + vegan dinner packed with protein, fiber, heart-healthy fats, antioxidants, vitamin C, + manganese (an essential mineral for bone health and brain and nerve function). Gather This:
- 1 zucchini, spiralized
- 1 avocado
- 2 tablespoon olive oil
- 1 tablespoon water
- 1 tablespoon nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon Green Dream Superfood + Protein Blend
- 1 teaspoon crushed garlic
- a handful of basil
- sea salt + cracked pepper to taste
Do This:
Blend the avocado, olive oil, water, nutritional yeast, lemon juice, Green Dream, garlic, basil, salt, and pepper until smooth. Toss with the spiralized zucchini, serve, + ENJOY!
