I was craving a peppermint patty... BIG TIME this past weekend. Instead of digging into the kids halloween candy, I decided to get busy in the kitchen.
Full disclosure, I ate every last one of these by Monday evening, a mere 48 hours after they were made. Guess what else? I have zero guilt about that. These are so clean! They are vegan, gluten-free, paleo, grain-free + made with WHOLE, REAL ingredients. Dig in! You can also swap out the heart cookie cutters with normal round ones for more authentic versions of Peppermint Patty's!
- 1 C cashew flour
- 1 tsp coconut flour
- 2 T Cacao Magic Superfood + Protein Blend
- 1/4 t baking soda
- 1/8 t pink sea salt
- 2 T coconut oil, melted
- 1/4 C Cacaobee Superfood Manuka Honey
- 1 t + 1/2 t peppermint extract or essential oil
- 6 oz chocolate chips/chunks
In a food processor, combine the flours, Cacao Magic powder, baking soda + salt.
Pulse in the coconut oil, honey + 1 t peppermint extract until a dough forms.
Roll out the dough between 2 pieces of parchment paper to 1/8 inch thickness. (I used a glass since I didn't have a roller.)
Freeze the dough for 15 minutes.
Using a cookie cutter, cut out the dough.
Transfer the hearts or circles (or whatever shape you use!) to a parchment lined baking sheet and bake at 350 F for 4 min.
Cool completely on the baking sheets and freeze for 1 hour.
Melt the chocolate + 1/2 t peppermint extract in a small saucepan over very, very low heat.
Dip each cookie in chocolate then place on a parchment-lined plate.
Transfer the plate to the freezer for 1 hour, then remove + IN-JOY!
