Salted Chocolate Matzah Toffee Recipe

Passover starts this Friday. It’s always been a symbolically intimate celebration in my life. For me, it’s a time to embrace and celebrate the relationships I’ve nurtured, my little loves, my partner and all the people in my life helping me to reach my most aligned self. Passover is a celebration of rebirth and freedom. What better way to celebrate than with homemade foods the whole family can enjoy?


This variation of a matzah dish is satisfyingly sweet, dairy-free and made with pure, wholesome ingredients. It uses some of my favorite ingredients like goji berries, cacao, almond and coconut for a tasty, high vibe boost of healthy fats, vitamins, antioxidants and minerals. During all the celebrations your family and friends are guaranteed to stay nourished and radiant!


Gather This:

10 matzah crackers

2 cups coconut oil

2 cups coconut sugar

2 tsp kosher vanilla extract

1 cup small sliced almonds

1 cup shredded coconut

1 cup cacao nibs

1 cup goji berries

2 ⅔ cups dairy-free, semisweet chocolate chips

⅛ cup of fleur de sel

Do This:

Preheat oven to 350℉. Cover a cookie sheet with heavy duty aluminum foil. Be sure to cover all of the edges of the cookie sheet with the foil so that no edges are showing. Place the matzah crackers in the cookie sheet in a single layer of rows. If you find that there are open spaces on the cookie sheet, simply break up the crackers and fill in the gaps with the smaller pieces.


Melt your coconut oil by placing it in a saucepan on the stove and turning your burner on to the medium heat setting. When the oil begins to melt, stir the coconut sugar into the oil until well incorporated. (If you don’t have coconut oil or coconut sugar, regular butter and brown sugar will work as well.) Once the oil is fully melted, bring to a boil and stir continuously for 3 minutes until the ingredients have completely combined into a thick, syrupy consistency.


Remove the mixture from the heat, add the vanilla, and stir a couple of times to mix. Carefully pour the mixture over the crackers and use a spatula to spread the mixture so that it coats all of the crackers evenly. Place in the fully heated oven and bake for 15 minutes. While the matzah is baking, mix the coconut, almonds, cocoa nibs, and goji berries in a bowl.


Remove matzah crackers from the oven after 15 minutes and let them cool for about a minute to allow the mixture to stop bubbling and begin forming into a toffee coating. Sprinkle the chocolate chips onto the hot toffee, wait for 3-5 minutes until the chocolate melts, and then spread the chocolate with a frosting knife or butter knife.


Sprinkle the coconut, almond, cacao nibs, and goji mixture onto the chocolate, as desired, and gently press the toppings down with a flat spatula. Sprinkle fleur de sel over the top. (Depending on your preferences, you may want to add just a tiny bit or you may want to sprinkle it more generously.) Once your toppings are in place, allow the matzah to sit at room temperature until completely cooled, and then place in the fridge for at least one hour to set.


You can serve the matzah toffee treats whole or break them into pieces. Arrange on a plate as a single layer with parchment in between and be sure to serve with love! Enjoy and Happy Passover!

Good ol’ fashioned toast recipes will never go out of style! Sweet or savory, we love finding new and fun ways to top our toast with veggies, fruits, spreads and superfoods.

1 slice of your favorite bread of your choice

AVOCADO TOAST

1 small avocado

1 tsp Green Dream

BEET HUMMUS TOAST

2 tbsp Beet Hummus (recipe here or you can find it at Whole Foods or Trader Joe’s)

Quinoa crisps


Optional: microgreens


Do This:

While bread is toasting, make your hummus and slice your avocado. Spread sliced avo on half of toast and top with Green Dream, then on the other half spread your hummus and top with quinoa crisps. ENJOY!

Cacao Chamomile Elixir

This elixir uses chamomile powder which you can make by gathering dried ORGANIC chamomile flowers and blend until a fine powder forms. Gather This:

1 tbsp Cacao Magic

1 tsp Cacao Bee Honey

1 cup milk of choice (ie oat, almond, coconut)

1 tbsp coconut cream

1 tbsp Cosmic Elixir or collagen of choice

½ tsp chamomile powder

8-12 oz. brewed coffee (optional)


Do This:

If you’re making a latte, brew your coffee.

Steam milk.

Mix together all other ingredients either in a blender or with a handheld frother until well blended.

**For chamomile powder: Gather dried ORGANIC chamomile flowers and blend until a fine powder forms.

Cosmic Mint Chocolate Pudding

Don’t let yourself miss out on the pleasures of life. So, if you want the chocolate then eat the chocolate! For an easy-to-make, delicious cacao chocolate treat, whip up this super yummy and mood-balancing cosmic mint chocolate pudding. 


This pudding is full of protein, nutrients and healthy fats from the avocado, coconut cream, and our superfood blends. It receives its delicious chocolatey flavor from the raw cacao powder in the Cacao Magic (which is made by grinding cacao beans into a paste and then removing the oils to create a fine powder). We’ve also added Cosmic Elixir, which is a blend of grounding adaptogens and beautifying collagen with no added sugar. 


Add fresh mint leaves for an extra pop of flavor and a bit of monk fruit for an extra touch of sweetness. Mamas, your kiddos will love!

Gather This:

½ cup milk

5.4 fl oz coconut cream

½ avocado

2 tbsp Cacao Magic

1 tsp Cosmic Elixir

A few mint leaves

1 tsp cinnamon

Dash of sea salt

Handful of cacao nibs 

1 tsp monk fruit 


Do This:

Combine all ingredients in the food processor or high-speed blender. Let sit for 30 minutes in fridge or overnight until the pudding has thickened. Stir and enjoy!

1 cup almond milk or coconut water

1 spoonful Cacao Magic

1 spoonful of Green Dream

2 tablespoon peanut butter or almond butter

1 banana

Handful of spinach

Add ice to the thickness and consistency you like


Do This:

Combine all ingredients in a high-powered blend and blend! Pour into your favorite glass and enjoy!

Green Dream Chickpea Hummus Dip

Ramp up your snack game with this ultra-nourishing, super satisfying homemade hummus! It’s just as easy as making a smoothie and only requires a handful of ingredients to create a creamy dip—perfect for pairing with pita bread, wholesome chips, cucumbers or baby carrots!


We made this hummus even better by adding our Green Dream superfood blend which is packed with essential minerals and yummy fats and plant-based protein. You can easily make any food a superfood by adding your favorite Philosophie superfood blends to dips, spreads, sauces and more outside of your lattes and smoothies!

Gather This: 

1 can cooked chickpeas (drained)

1⁄3 cup plain greek yogurt

1 tablespoon Green Dream

1 teaspoon dried dill 

1 teaspoon dried parsley 

1⁄2 teaspoon garlic salt

fresh parsley or dill (for garnish) 


Do This: 

Combine ingredients in a blender or food processor and blend until smooth. Garnish with fresh parsley and dill (we also added some bee pollen for fun and texture!) Enjoy with pita bread, veggies, or your favorite wholesome crackers!

Acai + Banana Green Superfood Smoothie

So this superfood smoothie bowl might not look green, but it’s made with our detoxifying and protein-rich Green Dream superfood blend which is PACKED with superfoods such as spirulina, maca, hemp seeds and more!


Incorporating greens and superfoods whenever you can, even when you can’t get a workout in, can really keep you looking and feeling amazing! Between the açai, the berries, banana and the Green Dream...I think we had our bases covered! 


Tip: Use a blender that has a tamper so you can mix the frozen ingredients with the almond milk while the blender is running. It might seem like more liquid needs to be added but if you keep mixing you’ll see everything start to blend and you will get a perfect consistency!

Gather This:

BASE

1 cup frozen berries

1 frozen banana

1 heaping tbsp Green Dream

1 acai packet

½ cup almond milk

¼ cup water (only use if the base needs more liquid to blend better)

TOPPINGS

Banana

Chia seeds

Hemp seeds

Coconut flakes

Blueberries

Granola 


Do This:

Blend all of the base ingredients and slowly add in the liquid until desired consistency is reached. Top with toppings and enjoy!
