I came across Alyssa Melody’s products on Root & Bones and knew we had to make some magic together. I had no idea it would create this guilt-free treat that tastes like heaven. It has all my favorite ingredients in it, including matcha for natural energizing vibes, dates, coconut, and a touch of lime for an extra kick.
We used our satisfying Coconut Dream Superfood Coconut Better which is full of powerful nutrients and complemented each unique flavor in this sweet cake from the lime to the delectable flavor profile of Root & Bones’ He Shou Wu. This superherb powder stimulates the body to strengthen red blood cell membranes, lower cholesterol, support the immune system, and improve brain function. All these potent superfoods in a slice of cake makes you feel SO good!

Gather This:
CRUST:
1 cup pitted dates (soaked for 1 hour if dry)
1/2 cup almonds
1/2 cup walnuts
1/3 cup shredded coconut
1 tbsp coconut oil
1 tbsp Coconut Dream Coconut Butter
2 tsp He Shou Wu
FILLING:
2 cups raw cashews
1/2 cup melted coconut oil
1 tbsp melted Coconut Dream Coconut Butter
2 tbsp maple syrup
2/3 cup lime juice
1 teaspoon vanilla extract
1 teaspoon matcha powder
2 tsp He Shou Wu
Do This:
To make the crust, combine all the ingredients in a food processor until sticky. Once the crust is sticky, press it down into a 9 inch springform cake pan.
Blend the filling ingredients in a food processor until soft and creamy. Pour the filling over the crust and place in the freezer for at least 3 hours (or let it sit overnight). Take the pie out of the freezer 20 minutes prior to eating. Serve and enjoy!
