Fall is here and we are LOVING making all our favorite fall recipes. Have you tried persimmon? They make an incredible addition to pies, smoothies, breads, taste great raw and so good added into a nice cream with Cacao Magic and Fall Vibes!
Persimmons have incredibly high fiber contents which means that they promote a healthy digestive tract and will keep you feeling full longer. The bright red-orange color of the persimmon is due to high levels of disease-fighting phytonutrients and nourishing antioxidants like vitamins A, C, and K, all of which prevent cellular damage and reduce the signs of aging. Persimmons are also a good source of betulinic acid, a compound that has been shown to have anti-tumor properties!
We’re loving this jack-o-lantern shaped persimmon pumpkin bread created by the insanely talented Danielle of @cacaoforcoconuts_ using our seasonal Fall Vibes. Enjoy this delicious fall treat!
Gather This:
2 cups quick oats blended to flour
⅓ cup carob powder (or cocoa)
2 ripe bananas
⅓ cup pumpkin purée
1 tsp Fall Vibes
1 tsp baking soda
Do This:
Combine everything in a food processor.
Preheat oven to 350°F.
Spray or line a dish with parchment paper!
Top with persimmons (make them little pumpkins)
Bake for 23-25 minutes until bread is firm!
Cool and enjoy!
