Corn and Tomato Salad Recipe

Create this gorgeous and vibrant salad with phytochemical-rich arugula and bell pepper, tomatoes, and sweet, nutritious summer corn. Tossed with our favorite Green Dream Savory Blend and you have a tasty, hydrating and nourishing summer salad!

I love making a refreshing salad like this one because it’s bright, colorful and loaded with everything I need to keep my day happy and elevated. Sweet corn balances the peppery arugula and tart tomatoes. It’s the perfect combination of sweet and savory, satisfying and hydrating, light and filling. 

Pair it with a superfood kombucha mocktail or herbal water and you’re ready for all the summer vibes!

Gather This:

1 cup arugula

½ red bell pepper (sliced)

Handful of multi tomatoes (halved)

3 cups corn (fresh, grilled, or frozen)

1 small onion (chopped)

1 lemon (juiced)

1/4 cup sesame seed oil

1 tsp Green Dream Savory Blend

3 tbsp Green Dream-covered roasted pumpkin seeds (Coat seeds in superfood powders and roast them in the oven at 350F for 5-7 minutes for a wholesome crunch!)

Salt + pepper to taste

Do This:

If using fresh corn, blanch the corn for 1 minute or grill the corn. If using frozen corn, thaw out the corn before using. Chop tomatoes, bell pepper and onion. In a large mixing bowl, combine the arugula, corn, bell pepper, tomatoes and onion. Add the lemon juice, sesame oil, Green Dream Savory Bend, and salt & pepper. Mix well to combine. Taste for seasoning adding more lemon juice or salt & pepper as needed. Finish with a handful of Green Dream roasted pumpkin seeds and you’re done! Enjoy right away, or let the salad sit for about 10 minutes (you can also chill it if you like). The arugula will soften and slightly wilt during that time, making it a bit easier to eat. ENJOY!

Green Gluten-free Pumpkin Waffles

I think we can agree that most mornings we crave carbs and heavy foods, which is why bagels are so popular. We’ve been “fasting” all night so our bodies are craving replenishment. I’m definitely a fan of gluten here and there but if you have it first thing in the morning you’ll more likely to hit a crash much earlier in the day than you would like. I believe that you DON’T have to sacrifice things that look good, taste good and make you feel good just because it's healthy for you. These nutrient-dense green gluten-free pumpkin waffles hit all three!

Pumpkin gets a bad rep during the holidays because of the recipes it’s used in but it’s actually a superfood. The carotenoids that give the squash their bright orange color are converted by the body into vitamin-A, which promotes skin and eye health. One particular carotenoid that can be found in pumpkins, beta-carotene, is an antioxidant that has even been linked to a decreased risk of some cancers. Pumpkins are also full of digestion-friendly, hunger-curbing fiber as well as potassium, a vital mineral that can help balance electrolytes after an intense fitness sesh.

Gather This:

1 can organic pumpkin puree

5 large organic free-range eggs (or chia eggs)

1 tbsp Green Dream Superfood + Protein Blend

1 large handful of spinach

½ cup almond milk

½ cup coconut flour

¾ cup tapioca flour

1 tsp vanilla extract

½ tsp baking soda

½ tsp baking powder

2 tbsp coconut oil

1 tsp pink sea salt

1 tsp Fall Vibes Pumpkin Pie Superfood Blend

1 tbsp raw honey or sweetener of choice 

Do This:

Mix all ingredients into a high-speed blender. Add mixture to a pre-heated waffle iron + cook until crispy on the outside (cooking time will vary depending on your iron). Top with your favorite toppings of choice! We used strawberries, bee pollen, pomegranate and walnuts but it would taste amazing with maple syrup or anything else you’d like!

Combine all ingredients in a high-powered blender until smooth. Warm it up on the stovetop or drink it cold. You can add a sprinkling of Fall Vibes on top for more fun + flavor!

Tasty Vegan Pesto Zoodles

One of my favorite clean and simple recipes is a pesto zoodles dish. We’ve been making this dish in our home for years! I love the fact that all the superfoods and fresh greens create and energizing and satisfying dish without it being too heavy. This recipe uses raw zucchini, raw nuts, a healthy dose of greens and the Green Dream Superfood + Protein Blend (or Green Dream Savory Blend if you have that stocked up and you should). The cleansing and detoxifying properties of this recipe make it a great dish to make while you’re resetting the body. We actually include it in our 10 Day Refuel Cleanse.

Great for lunch or dinner and makes an even better packable lunch for the office! Psst, moms - kids love it too!

Gather This:

1 zucchini (spiralized)

¼ cup olive oil

¾ cup cashews

½ cup pine nuts

1 cup basil 

2 tbsp water

1 tbsp nutritional yeast

1 tsp sea salt

1 tsp Green Dream Superfood Blend 

1 clove garlic

Do This:

Spiralize your zucchini or buy spiralized zucchini and set aside. 

Tear stems off your basil and add to a blender (you can also add other greens and sprouts here). Add soaked or unsoaked cashews to blender - depending on personal preference. Add Green Dream Superfood + Protein Blend, nutritional yeast and sea salt OR 2 tbsp of Green Dream Savory Blend which has sea salt and nutritional yeast in it. Add water, oil and blend until smooth.

Dish your zoodles into a bowl and cover with the homemade pesto sauce. You can also top with some sprouts and pine nuts if that’s your jam. Then, enjoy!

Simple Fall Fennel Salad with Kale + Beets

We’re getting fancy up in here! But not really, because this dish is actually so simple to make and super fall reset-friendly. You can make any dish more health-conscious and nourishing by simplifying the ingredients, cooking with love and really filling your plant with color. This perfect little salad is filled with color and bursting with flavor. You’re basically eating fall on a plate and it’s such a delight to cook and enjoy. 

Fennel is an interesting root veggie with a peak growing season in fall and winter during the cooler months. It’s light licorice flavor and crunchy texture is surprisingly addicting and works beautifully with roasted veggies or other savory dishes. It can also be used in stews and soups or act as a red on your favorite protein dishes. The vitamin and mineral content in fennel helps to build and support bone structure as well as support a strong metabolism. 

Adding roasted beets, spiralized zucchini, kale and a touch of Green Dream Savory Blend makes this late lunch or dinner salad taste as good as it looks. Can’t wait to hear what you think!

Gather This:

1 bulb of fresh fennel

1 head of organic kale

3 large red beets 

⅓ cup walnuts

1 zucchini 

1 tsp Green Dream Savory Blend

1-2 tbsp EVOO

Do This:

Cut and roast beets for 25 min. at 400℉. While that roasts, chop up your kale and fennel then set aside. Spiralize 1 zucchini and set aside. Saute fennel and kale for 5 min. in a healthy dose of EVOO. Pull beets from oven and combine all ingredients in a bowl, toss with Green Dream Savory Blend, plate and enjoy!

Paleo-Friendly Superfood Waffles

These delicious waffles filled with superfoods is a perfect mid-week treat during a reset. We used Birch Benders Paleo mix, which is loaded with organic coconut flour, almond flour, monk fruit and spice. It’s so yummy! We add a touch of Green Dream Superfood + Protein Blend that add energizing + detoxifying properties! 

Gather This:

1 bag of Birch Benders (or waffle mix of your choice)

1 tsp Green Dream Superfood + Protein Blend

Optional: Philosophie Superfood Honey to drizzle on top

Do This:

Follow directions on the bag of mix, and add 1 tsp of Green Dream Superfood + Protein Blend. Cook batter in your waffle iron and finish with honey if you’d like!

Clean-Eating Pomegranate Coconut Yogurt Bowl

I love fall most of all for all the delicious fruits + veggies that come in season. They’re easily some of my favorite and one of them, pomegranate, is at the top of my list. Pomegranates have symbolized everlasting life and vibrant health across many cultural traditions, from ancient mythologies to cherished religious texts. They are the only food that contains a compound called punicalagin, which has been linked to lower cholesterol levels, healthy blood pressure, and decreases in the atherosclerotic plaque that causes heart blockages. The seed at the center is also incredibly rich in fiber, while the tender flesh around the seed may promote joint health and reduce the risk of depression! So, so good for you and the perfect fruit to enjoy during a reset!

Pomegranate seeds play beautifully in a nourishing + simply coconut yogurt bowl. Pair it with some Green Dream and you have a tasty, yet yummy afternoon lunch!

Gather This:

¾ cup Coconut Cult Yogurt (or any other dairy-free yogurt of your choice)

½ cup pomegranate seeds

½ unsweetened coconut shreds

½ cup walnut

1 tbsp Green Dream Superfood + Protein Blend

Optional: drizzle of Green Bee Honey

Do This:

Scoop the Coconut Cult Yogurt into your favorite bowl. Top with pomegranate seeds, walnut, coconut shreds and the Green Dream Superfood + Protein Blend. If you’d like a touch of added sweetness, drizzle on some Green Bee Honey and enjoy!
