Simple summer recipes can be challenging when you have more mouths to feed and maybe you’re away on vacation or at a family’s home. I turn to recipes that can be made for a group or you and the hubby. What’s more important is that has whole, natural ingredients for all the nourishment your body craves.
This Roasted Eggplant dish is so satisfying and such a perfect dish after a day spent by the pool or out and about. Eggplant is high in antioxidants, vitamins, fiber, and low in calories making it a great weight-loss veggie.
1 Organic Eggplant
A handful of cherry tomatoes
1 clove of garlic
Slice eggplant lengthwise, drizzle with EVOO, salt+pep and roast in the oven on 400, for 45 minutes. About half way through, slice the tomatoes and place them spread out on top of the eggplant, to roast as well for the remainder of the 45 minutes. Chop up the garlic and thinly slice the basil, sprinkle garlic, basil and 1 tsp green dream superfood powder on top of the eggplant. Eat as is or enjoy with some yummy mixed greens or brown rice!
