We can’t get enough citrus in the summer. Citrus flavors are refreshing and versatile - a little citrus is welcome in pretty much any recipe because of the brightness it adds. Everyone here at Philosophie has a HUGE sweet tooth, so desserts are our favorite foods to make with citrus flavors. The acidity of citrus cuts through rich sweets and keeps them from making you feel sluggish and bloated, so you can enjoy them while soaking up the sun and staying active.
These lemon bars are a great example. They’re completely raw- no oven or baking sheets required - and jam-packed with superfood nutrients, including omega-3’s, iron, camu camu + mangosteen. The date/nut base is complemented by a Berry Bee coconut cream topping, with a little lemon zest to temper the richness. The recipe calls for macadamia nuts and walnuts, but you can play around with the flavors and substitute pistachios, pecans, cashews, or even Brazil nuts. Don’t feel tied to lemons either - like we said, summer is the season for all citrus! Try these out with blood oranges, mandarins, grapefruit, or kumquats if you’d like. Make a batch before a hike, beach picnic, or any other fun summer activity.
Gather This:
FOR THE BASE
½ cup pitted dates
¼ cup raw macadamia nuts
¼ cup raw walnuts
1 tbsp lemon zest
1 tbsp Berry Bliss Superfood + Protein Blend
1 tsp coconut oil, melted
A pinch of sea salt
FOR THE TOPPING
1 cup coconut cream
1 tbsp Berry Bee Honey
1-2 tsp lemon zest
juice of ½ lemon
Do This:
- For the base: blitz all ingredients in a food processor or blender, then form into a square on some parchment paper. Place in the fridge to cool.
- For the whipped topping: add all ingredients to food processor or blender, and pulse until combined. Season to taste, and add more zest or honey if you’d like. Place in the fridge to cool.
- Once your bars and coconut cream have chilled and set, remove from the fridge. Add as much whipped topping as you’d like, and garnish with lemon zest, edible flowers, bee pollen or maybe some coconut flakes!
Enjoy immediately or store in the fridge for up to a week!
