Rice Cracker Cakes Recipe
When it's mid-day and I've just knocked out a major task like demoing superfoods at a new shop or planning festivities for an upcoming wellness retreat, I like to celebrate with a snack that'll help power me through the rest of the afternoon AND make my tastebuds super happy!
Enter these dreamy Rice Cracker Cakes. These beauties have EVERYTHING you need – delicious crunch, sweet nuttiness, chocolatey goodness, and a layer of fresh fruit!
In addition to making an excellent "base" for superfood amazingness, rice cakes are full of fiber and iron, a mineral that helps your bod make healthy red blood cells and keep your immune system going strong.
When you spread on almond butter that's been mixed with Cacao Magic, you also add vitamin E, copper, magnesium, and antioxidants to your tasty snack. After sprinkling on starfruit and fresh berries (or your favorite fruit!), plus protein-rich bee pollen and hemp seeds, you'll have truly transformed a plain old rice cake into a decadent treat!
Gather This:
- 2 rice cakes
- 2 tablespoons almond butter
- fresh fruit of choice
- 1 teaspoon Cacao Magic Superfood + Protein Blend
- 1 teaspoon of bee pollen
- 1 teaspoon hemp seeds
Do This:
Combine the Cacao Magic with 2 tablespoons of almond butter. Spread 1 tablespoon of the sweetened nut butter on one rice cake, and the other tablespoon on another. Add fresh fruit, hemp seeds, and bee pollen (granola would be super yummy too) + enjoy!
