Toast Tuesday: Avocado Egg Toast
The ultimate breakfast after a hard workout is a tasty toast with creamy avocado, fried egg, and a dash of smoked paprika. While I’m sure I don’t need to convince you why this toast would taste terrific, I’ll give you the low-down on why it sure is one powerhouse of a breakfast!
Filled with omega-3 fatty acids and natural vitamin E, avocados are phenomenal for keeping your brain functions in tip top shape. This versatile green fruit also has a ton of good-for-you fats that help lower cholesterol levels. In addition, avocados are very high in fiber, which helps with weight loss, reducing blood sugar spikes, and keeps you feeling fuller for longer.
Once the avocado’s spread on the toast, I love topping it off with an organic egg fried up in coconut oil. Not only are eggs an inexpensive, fabulous source of protein, they’re also loaded with vitamins and essential healthy fats. While choline may be an unfamiliar term, this amazing nutrient is also found in eggs and supports building cell membranes in our brain – making this a true superfood!
Gather This:
- slice of Udi’s Gluten-Free Bread
- ½ avocado, smashed
- 1 egg
- tablespoon coconut oil
- smoked paprika (to taste)
- salt + pepper (to taste)
Do This:
After popping your bread into the toaster, spread the avocado on the toast using a fork. Fry your egg in the skillet with coconut oil, add the paprika, salt, and pepper, + enjoy!
