Simple Family Passover Recipes

Looking for healthy Passover dishes to bring to your Seder? These are delicious, nutritious, and won't leave you feeling too full after a plentiful meal! You can also enjoy many of these dishes at any time of the year for wholesome, healthy, balancing dinner dishes. 


Passover has always been a symbolically intimate celebration in my life at the start of spring. Passover is a celebration of rebirth and freedom. What better way to celebrate than with homemade foods the whole family can enjoy?


Carrot & Beet Latkes with Raw Savory Applesauce 


Gather This:

1 tsp fresh lemon juice

1 tsp coarse salt

½ tbsp Green Dream

¼ tsp freshly ground pepper

½ pound carrots (about 4 medium), peeled and grated on the large holes of a box grater

¼ pound beets (about 2 medium), peeled and grated on the large holes of a box grater

1/4 pound sweet or russet potato (about 1 small or 1/2 medium), peeled and grated on the large holes of a box grater


Do This:

Stir carrots, beets, potato, Green Dream, salt, pepper and lemon juice and toss until combined and evenly coated.

Fill a large skillet with about ½ inch oil. Place over medium heat until oil is almost smoking. (To test, drop a small bit of batter into the skillet; it should sizzle upon contact.) Working in batches so as not to crowd skillet, carefully spoon about 2 tablespoons batter into oil for each latke. Lightly tamp down to flatten. Cook, turning once, until golden on each side, 2 to 3 minutes. Using a slotted spatula, transfer to a paper-towel-lined wire rack to drain. Repeat with the remaining batter. Serve immediately with cashew cream and applesauce (recipe below).


 

Savory Apple Sauce 


Gather This:

2 lb Granny Smith apples (4), peeled, cored, and chopped

½ cup water

2 tbsp ghee

1 tbsp Green Dream

1 tbsp cider vinegar

4 garlic cloves, quartered

½ tsp chopped fresh marjoram or thyme


Do This:

Simmer all ingredients except Green Dream in a 3-quart heavy saucepan, covered, stirring occasionally, until apples fall apart and garlic is tender, about 15 minutes. Mash garlic into applesauce. Add Green Dream, mix well. Season with salt + pepper.


Matzah Pizza Recipe


Gather This:

PESTO & ARUGULA PIZZA

pesto

cherry tomatoes

arugula

bell pepper

MEDITERRANEAN PIZZA

tahini or hummus

marinated olives & artichokes

dairy-free, meltable cheese

ITALIAN PIZZA

tomato sauce

baby summer squash

dairy-free, meltable cheese

SWEET PIZZA

fig jam

goat cheese

Cacao Bee Honey


Do This:

To create a base, spread your sauce of choice (pesto/tahini/hummus/tomato sauce/jam) on the matzah. Add your favorite raw toppings, sprinkle on some cheese, and then pop your matzah pies into the oven. Bake until the cheese has melted and voila—your pizzas are ready!


Simple Green Dream Roasted Carrots Recipe


Gather This:

1 bag of Organic Carrots (we used heirloom carrots)

1 tbsp EVOO

1 tsp Green Dream

1 tsp Green Bee Honey

Do This:

Slather carrots with Green Dream, Salt and Pepper, and roast on 400 degrees for 35-40 minutes, turning every 10 minutes. Once caramelized, take out of the oven and drizzle with a bit of Green Bee Honey.


Optional: Add our Green Dream Pesto on the side for that extra flava.


Salted Chocolate Matzah Toffee 


Gather This:

10 matzah crackers

2 cups coconut oil

2 cups coconut sugar

2 tsp kosher vanilla extract

1 cup small sliced almonds

1 cup shredded coconut

1 cup cacao nibs

1 cup goji berries

2 ⅔ cups dairy-free, semisweet chocolate chips

⅛ cup of fleur de sel

You can serve the matzah toffee treats whole or break them into pieces. Arrange on a plate as a single layer with parchment in between and be sure to serve with love! 



Raw Charoset Truffles Recipe


Gather This:

For the truffles:

1½ cups pitted dates

½ cup dried apples

½ cup chopped walnuts

1 tbsp Cacao Magic

1 tbsp Cacao Bee Honey

1 tbsp coconut oil, melted

1 tbsp sweet red wine/dessert wine (for non-alcoholic truffles, use water)

1 tsp cinnamon

coconut sugar, for decorating

TOPPINGS

2 Fuji Apples, chopped

1 cup toasted walnuts, chopped

⅓ cup sweet red wine/dessert wine

1½ tsp of cinnamon

1 tbsp Berry Bee Honey

1 tbsp dark coconut sugar

½ tablespoon orange zest


Do This:

FOR THE TRUFFLES:

Pulse all ingredients in a blender or food processor until fully incorporated. Once the mixture comes together, form into balls and roll in coconut sugar. Place in the fridge to chill for at least 1 hour. Store in an airtight container. Truffles will last up to two weeks in the fridge!

FOR THE TOPPING:

Pulse all ingredients, in a blender of food processor until fully incorporated (your charoset should be relatively chunky). Serve with matzah, challah, ice cream, yogurt, or on its own!
