How to Sprout Seeds and Nuts: Sprouting made easy

 

Boost the Protein when Seeds and Nuts are Sprouted, drop the Carbs!

 

You probably already know that nuts are good for you.  If you don't, let me tell you why they are! They are an excellent protein alternative for those who are trying to eat less meat and they are packed full of nutrients and heart healthy monounsaturated fats that our bodies need. One of nature’s power foods, certain varieties of raw nuts are high in vitamin E, folic acid, calcium, copper, magnesium, manganese, phosphorus, and zinc, to name just a few.

Nuts are also packed with protein and easy to carry around. They are a staple energy food that humans have relied on for thousands of years. So the next time you are looking to increase the nutrient content of your breakfast, snack food, salad, health drink or even dinner, raw nuts should be one of the first things you think of. But how can you know if you are getting all of the incredible benefits of raw seeds and nuts? Did you know that it’s possible to make this natural superfood even better?

Sadly most of the “raw” nuts sold in North American stores are far from fresh, and far from raw. A standard practice in the shelling of Brazil nuts for example is to soak them in water for 1-2 days and then boil them for 5 minutes to soften the shell which makes machine or hand cracking easier. The heat from the boiling kills the nut and by the time it has reached grocery store shelves it is not only no longer alive and no longer raw, it can be full of rancid oils as well, which are toxic for your body.

Raw nuts are as much a living food as salad greens or sprouts. Nuts are seeds. The whole food goodness that makes them such a wonderful addition to your diet is because of their properties as viable seed. For a seed, or nut, to be viable it must, given the proper conditions, be able to sprout and grow into another plant. To find nuts that are fresh and alive, search for nuts that are advertised for sprouting, or purchase local varieties, the kind sold in small batches at farmer’s markets. That way you can ask how the nuts are processed.

Sprouting is practically magic when it comes to boosting the health benefits of seeds, nuts and grain. When a seed is soaked and begins to sprout, it releases the nutrients that are locked inside. Dormant seeds have in them something called enzyme inhibitors, which stop enzyme reactions. This keeps them from going bad longer, or sprouting in unfavorable conditions, but it also makes them difficult to digest. Once a seed is sprouted the enzyme inhibitors are gone and the nutrients are readily available as well as the beneficial enzymes. Sprouted seeds also increase in protein while decreasing in carbohydrates as the seed uses the carbohydrate energy stored inside to grow. Soaking also breaks down the glutens and hard to digest proteins into smaller and easier to digest components. Sprouted nuts become even more delicious and good for you than raw nuts.

Sprouting is a very simple process and has such great health benefits that it is worth trying! (and it's fun! like doing an experiment in 7th grade science class all over again)

Here is a simple sprouting method that can be done with readily available items from your own kitchen:

Equipment: Begin with a glass jar and a clean tea towel or cheesecloth. It’s a good idea to sterilize these first in boiling water with a bit of food safe hydrogen peroxide, or grape fruit seed extract.

THREE SIMPLE STEPS

Step 1) Rinse and Soak Place nuts in the jar and fill it with water. Only use enough nuts to fill about 1/3 of the jar. Sprouts need room to grow. Rinse the nuts two or three times and drain with a colander. Once the nuts are rinsed fill the remainder of the jar with cool clean water. Tie the tea towel or cheesecloth over the top of the jar with an elastic band, or piece of string, or a canning jar ring. Keep the jar out of direct sunlight and allow the nuts to soak. Most nuts should soak for 4-12 hours before draining. Do not soak them for too long or they will rot instead of sprout

Step 2) Drain After 12 hours drain the water. You can prop the jar at an angle upside down to allow all of the water to drain completely. The towel or cheesecloth will hold your sprouts inside. Once the nuts have soaked they are already awake and free of enzyme inhibitors. You can eat them now, or you can allow them to sprout longer. You should taste your sprouts every time you rinse them so you know what way you like them.

Step 3) Rinse If you choose to let them sprout longer, rinse and drain every 8 hours or so. Unlike some types of seeds, sprouted nuts will not develop a long shoot. They swell rather than sprout and only produce a little bulge at one end rather than a root.

 

Sprouted nuts can be eaten all by themselves as a snack food, or they can be added to salads, made into nut mylks and included in many other recipes. Sugarfree Cacao Magic {White} Chocolates!

You would never know these amazing chocolates are made from 4 ingredients, are RAW, gluten-free and SUGAR-free!

I wanted to make high protein, low sugar chocolates to satisfy my sweet tooth and my hunger!

Two or three chocolates would be the perfect power snack.

White Chocolates

you'll need:

  • molds for chocolates (bottom of a muffin tin would work)
  • 2 T Cacao Magic powder
  • 2 scoops organic vanilla Whey (if you're not using Philosophie approved whey, make sure you add stevia separately)
  • 1/4 C Organic coconut oil, melted (I put the jar inside hot water)
  • 1/4 C nut or seed butter of your choice (I used almond butter)

1. melt the coconut oil.

2. mix the coconut oil and nut/seed butter in a large bowl with a spoon until smooth.

3. add in the powders (you could also add green dream or berry bliss here)

4. fill molds or muffin tins. put into freezer for at least 30 minutes.

5. Eat and in-joy! <3

Maca - Immune boosting adaptogen that increases energy, sexual drive, and stamina.

Maca is a plant with a radish-like root that is used as a food and for medicinal purposes. Although maca is unrelated to the ginseng family, it has been dubbed "Peruvian ginseng" because it is used as a folk remedy to increase stamina, energy, and sexual drive.

Maca improves both male and female hormone balance, supports the adrenals, increases stamina, helps with erectile dysfunction and increases sex-drive and fertility! I would start with a teaspoon a day in a smoothie and increase up to 4 teaspoons a day. Read on to read more details!!

Maca-an Adaptogen

In the 1930s, Russian scientists studying plant medicine coined the term adaptogen to refer to a plant that promoted non specific benefits to an organism while inducing NO negative side effects.

An adaptogen is a substance which raises the non-specific resistance in an organism. Adaptogens enable the body to enhance its power of resistance and adapt to external conditions. They work with the body's natural rhythms to help rebuild weak immune systems, re-mineralize poorly nourished bodies, and increase energy and endurance.

The endocrine system is a collection of glands that produce chemical "messengers" called hormones essential for normal bodily functions. A wide variety of physiological processes are carried out unconsciously by these "messengers". Once released they flow directly into the bloodstream and are transported to organs and tissues throughout the entire body.

Scientists and doctors are now finding maca to be one of the best natural ways to regulate and support endocrine health. This action regulates metabolism, energy levels, growth, sexual development and the sense of well being and attitude.

Thankfully, maca does not contain hormones itself. Instead it provides a unique set of nutrients that directly fuel the endocrine system and help the glands to produce vital hormones in precise dosages predetermined by one's own body.

Sexual drive and fertility

According to folklore, ancient Incan warriors took maca before going off to battle to make them physically strong. However, they were later prohibited from taking it, in order to protect conquered women from their heightened libidos.

One study looked at the effect of 4 months treatment with maca tablets on semen quality in nine adult men. Treatment with maca resulted in increased seminal volume, sperm count, and sperm motility. A 12-week randomized controlled trial looked at 1,500 mg maca, 3,000 mg maca, or placebo. After 8 weeks, there was an improvement in sexual desire in the men taking maca.

So why does maca feel so good?

Personally, because I eat a primarily vegan diet, my body is somewhat low in iron and B vitamins. Although I eat as many plant based foods that contain iron and B vitamins, sometimes I need to take an iron and B vitamin supplement. I find that the days I have maca I don't need to supplement with the vitamins (OR COFFEE!)  because my body feels nourished. As an adaptogen, maca works broadly to contribute to overall well being. It nourishes and calms the nerves with calcium, phosphorus, vitamins B1 and B12 , and fatty acids, all of which work beneficially on the nervous system.

I would experiment, just like any other superfood or food, and try it each day for a few weeks and see how you feel. In my experience with maca, the best way to tell if it's affecting you is to take it away after some time.

Maca comes in pill form or is ground into powder. I include maca powder in many of my own smoothies, and in those of my clients when they are doing a cleanse or raw-life experience.

*I would avoid maca if you are on birth control.

Superfood Babies!!

Leo's cousin, Omri and my sister-in-love came to visit this weekend! Omri and Leo are only 7 weeks apart and soooo sweet together. Today I was making Philosophie Superfood Smoothies for the hubby, sista, Kai (my toddler) and myself and the babies WENT NUTS for it. We gave them little tastes which then turned into huge gulps. Lots of grabbing and whining for it. They were SO happy and elevated... all of us giggling, jumping, loving-- high on the superfood magic.

Here's the recipe I used (I tripled it for all of us):

  • 8 oz coconut mylk (can use almond, hemp or oat mylk)
  • 1 T Green Dream
  • 1 T Cacao Magic
  • 2 handfuls frozen organic kale
  • 2 ice cream scoops of coconut mylk Mint Chip vegan "ice cream"
  • fresh mint (about 10 leaves)
  • 1 T Cacao Nibs
  • 1 frozen banana
  • 1 T coconut oil
  • 1 T sunflower seed butter (could use any nut butter)
  • 2 handfuls of ice

Good fats are IN! Coconut oil, omega 3 fats and DHA!

Did you know that eating "GOOD FATS" can help you lose weight? That's right folks, GOOD fats can get rid of BAD fat! Although fat used to get a bad rep, it's finally getting it's due! The fact is: we all need fats.

We now know that some fats, specifically the omega fatty acids (also known as Essential Fatty Acids-EFA's) are vital for health.

Omega-3 Fats

The king of the EFA's are the omega-3 fats: alpha-linolenic acid (ALA), eicosapentaenoic acid (EPA) and docosahexaenoic aicd (DHA). Unfortunately, although DHA is  also an omega-3 fatty acid, it is NOT found in the other fats, so you have to find it elsewhere. (see below)

Plant sources of omega-3's include nuts and seeds, especially flaxseed oil or ground flaxseeds. they are also found in lesser amounts in legumes, whole grains and green leafy vegetables. Coldwater fish like wild salmon are a great source as well. The adequate intake guideline developed by the National Academy of Sciences Institute of Medicine recommends that men consume 1.6 grams of omega-3 fatty acids a day, and that women consume 1.1 grams daily. (unless pregnant or lactating, see below)

DHA's and Pregnancy

During pregnancy, developing babies rely on their mothers to get needed DHA. Since DHA is derived from the foods we eat, the content of DHA in a mother's diet determines the amount of DHA passed on to her developing baby. Unfortunately, the majority of pregnant women in the U.S. fail to get the recommended amount of DHA in their diets and DHA is not found in most prenatal vitamins. The good news is leaders in maternal health are beginning to educate women about the importance of DHA and some food manufacturers are starting to come up with creative ways to help people - pregnant and non-pregnant- get the DHA they need.

Current research suggests adequate levels of DHA may help increase a developing baby's cognitive functioning, reduce the risk of pre-term labor and decrease the risk of postpartum depression.

Why do pregnant and lactating women, who so critically need DHA, find it difficult to get the recommended amount of this crucial nutrient in their diets? There are two primary reasons. First, during pregnancy the daily requirements of DHA increase from 220 mg to somewhere between 300 and 1,000 mg (depending on which expert you consult). Second, DHA isn't easy to get in your diet, especially when you are pregnant. Significant amounts of DHA are found in animal organ meats and fatty fish.

My advice? Get a good DHA supplement from your doctor or from a health foods store. According to Dr. Barbara Levine, associate professor of nutrition in medicine at Weill Medical College of Cornell University, "the purest source of DHA is not the fish itself, but rather what fish consume: the ocean's vegetarian plant algae." Taking DHA supplements produced from marine algae is therefore a safe way for pregnant women to boost their fatty acid stores. (like the spirulina which is inside Green Dream powder!)

Another good fat: Coconut Oil

Organic coconut oil is an unrefined, non-hydrogenated plant oil that's produced from fresh coconut kernel without the use of harmful chemicals. The production process retains a maximum amount of the active medicinal compounds in this organic oil, including lauric acid, caprylic acid and capric acid. Modern research studies have found that these coconut oil compounds provide a number of benefits.

Possible Weight Loss

Coconut oil can be a healthy source of dietary fat when you're trying to lose weight, according to Bruce Fife. In his book “The Coconut Miracle,” he writes that it contains fewer calories than most oils and has no toxic trans-fats. Furthermore, the saturated fats in coconut oil are in the form of medium-chain triglycerides (MCTs), which are more easily metabolized than long-chain triglycerides (LCTs) and are less likely to get stored as body fat.

True story:

My girlfriend, who had a baby the same time as I did, couldn't lose the last few pounds 6-9 months after having her baby girl. She tried everything. She connected with me about the stubborn last pounds, so I asked her what she was eating each day, when, and what her activity level/exercise was like. Everything seemed fine.  She was breast feeding, so that should be doing the trick. After I was stumped, I said, "just as an experiment, try having 1-2 Tablespoons of coconut oil each day in addition to the rest of the stuff you're eating/doing. Don't change anything else, only the coconut oil each day." She DID, and 2 weeks later she reported in that she had lost that last 5-7 lbs!!! With NO other change but the coconut oil. Yeee! Love success stories!

Improves Immune Function
Functional Benefits

Coconut oil is rich in lauric acid, a compound that supports immune function, according to Jon J. Kabara, Ph.D., Professor Emeritus at Michigan State University. He writes that when you take coconut oil, the body converts the lauric acid in this oil into a compound called monolaurin. Kabara reports that monolaurin is a potent immune system stimulant that can also be obtained from human breast milk. It helps nursing babies to fight off infection while their immune systems are developing.

According to the Coconut Research Center, coconut oil is classified as a functional food because it provides a number of benefits beyond those provided by its nutritional content (also known as a superfood). Fife notes that more than half of the fatty acids found in coconut oil are in the form of lauric acid and capric acid, two compounds that have potent anti-viral, anti-bacterial and anti-protozoal properties that aid in treating genital herpes, influenza, HIV/AIDS, hepatitis C and gum disease.

My son AND my dog LOVE coconut oil. They will eat it by the spoon full, which is the best way to consume it. If you (or your family) don't love it that way too, no biggie, just add it to any smoothie or substitute it for other oils when cooking. You'll fall in love, trust me!

Cacao Magic Fiber Breakfast Cookies! Gluten-free & vegan

Fiber breakfast cookies with Cacao Magic

You know how you’ve heard people say “eat dark chocolate” for antioxidants and abundant health? Yeah, that’s because of UNPROCESSED, RAW, VEGAN Chocolate… CACAOCacao powder is chocolate in it’s most raw and nutritious form. WET INGREDIENTS

  • 1/2 cup chopped prunes or prune puree*
  • 1/4 cup sweetener (such as maple, brown rice or agave syrups)
  • 1/4 cup apple sauce
  • 1/4 cup nut butter (such as almond, pumpkin seed or tahini)
  • 1 Tbsp olive oil
  • 1 egg or 1/2 ripe banana
  • 1 tsp vanilla

DRY INGREDIENTS

  • 1 cup whole grain flour (or gluten-free flour)
  • 1/2 cup psyllium
  • 1/2 cup ground flax
  • 2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup or more of nuts, seeds, trail mix, or chopped dried fruit
  • 2 TBL or more of Philosophie Cacao Magic

 

*to give them a sweeter taste, you could add chocolate chips!

INSTRUCTIONS:

  1. Place chopped prunes in a blender and just cover with boiling water. Let soak while you prepare the dry ingredients. Also, lightly oil a large baking sheet and preheat oven to 350.
  2. Measure all dry ingredients into a large bowl and mix well. Measure all wet ingredients into the blender with the soaked prunes (do not drain), then liquify and stir into dry ingredients, combining well. Drop batter by the heaping tablespoon onto the greased cookie sheet and flatten just a bit with wet fingers or the back of a wet spoon. Bake for 15 minutes. Make sure you have a glass of water or cup of tea with each cookie. Makes about 20 cookies.

This recipe makes the cookies slightly crunchy on the outside. For a softer cookie double the amount of prune puree and apple sauce. This will make them almost muffin-like.
