Cacao Mint FUDGE
I've been doing a high paleo diet for the month of September with my best friend from home (DC/MD). She's pretty hardcore + militant about it (love you, Eve!) so I had to find a way to satisfy my sweet tooth while not disappointing the both of us. ;)
I L O V E the way maca tastes + the way it makes me feel (bouncing off walls, anyone?) so I added EXTRA maca powder to these babies along with Cacao Magic (which already contains maca!). You could definitely omit the extra maca + they will still taste absolutely divine.
GATHER:
- 2 T maca powder
- 1/2 C Cacao Magic powder
- 6 T melted coconut oil
- 1/4 C maple syrup
- 1 t peppermint extract
- 1/4 C coconut sugar or 1 teaspoon stevia powder
DO THIS:
In a food processor or medium sized bowl, mix all the dry ingredients together. Add the coconut oil + syrup, mix until combined. If mixing by hand, use clean hands to knead the mixture for 1 more minute.
Place a sheet of plastic wrap or parchment paper on a plate and pour the mixture on top. Mold the fudge into a 1 inch thick square. Add optional toppings (I love cacao nibs on top or goji berries.)
Pop in refrigerator for at least 30 minutes or until solid. Then slice into 1 inch cubes. For best results, keep refrigerated and wrapped until ready to enjoy.
BONUS/Optional Variation:
✩ add 1 T Green Dream for extra protein + greens when mixing in the powders.

hey Sara! High Paleo means eating a paleo diet 80-90% of the time. Veggies, Fruit, Seeds, Nuts, Meat, Fish. Nothing processed, no dairy. thanks for reading! :)
