One of my favorite clean and simple recipes is a pesto zoodles dish. We’ve been making this dish in our home for years! I love the fact that all the superfoods and fresh greens create and energizing and satisfying dish without it being too heavy. This recipe uses raw zucchini, raw nuts, a healthy dose of greens and the Green Dream Superfood + Protein Blend (or Green Dream Savory Blend if you have that stocked up and you should). The cleansing and detoxifying properties of this recipe make it a great dish to make while you’re resetting the body. We actually include it in our 10 Day Refuel Cleanse.
Great for lunch or dinner and makes an even better packable lunch for the office! Psst, moms - kids love it too!
Gather This:
1 zucchini (spiralized)
¼ cup olive oil
¾ cup cashews
½ cup pine nuts
1 cup basil
2 tbsp water
1 tbsp nutritional yeast
1 tsp sea salt
1 tsp Green Dream Superfood Blend
1 clove garlic
Do This:
Spiralize your zucchini or buy spiralized zucchini and set aside.
Tear stems off your basil and add to a blender (you can also add other greens and sprouts here). Add soaked or unsoaked cashews to blender - depending on personal preference. Add Green Dream Superfood + Protein Blend, nutritional yeast and sea salt OR 2 tbsp of Green Dream Savory Blend which has sea salt and nutritional yeast in it. Add water, oil and blend until smooth.
Dish your zoodles into a bowl and cover with the homemade pesto sauce. You can also top with some sprouts and pine nuts if that’s your jam. Then, enjoy!
