Grain-free, gluten-free paleo double chocolate cookies

I made these grain-free, paleo + gluten-free cookies today + basically dropped dead after trying them. I can't begin to tell you how amazing they are... and even the kids + hubby were head over heels in LOVE! They are soft, pillowy, tasty + SO HEALTHY! I can promise you, there isn't a person in your life that won't adore these: health nut or not! The Cacao Magic superfoods in this recipe sets it apart from other recipes out there. Cacao Magic has energizing raw cacao, hormone balancing maca root, healing medicinal reishi + omega rich chia seeds. What are you waiting for?

 

place in a bowl of a stand mixer or in food processor:

  • 1/3 C coconut oil
  • 1/4 C blood orange juice or passion fruit juice
  • 1 C coconut sugar 
  • 3 dates

set aside:

  • 2 eggs (or to make vegan, 2 chia seed eggs)
  • 2 t vanilla extract

whisk together:

  • 1 C almond flour
  • 1/4 C coconut flour
  • 3/4 C cacao magic powder
  • 1 t baking soda
  • 1/2 t salt

set aside:

  • 1 C chocolate pieces/chunks (we like Enjoy Life brand)

 

DO THIS:

1. Blend together coconut oil, blood orange juice, sugar + dates in the bowl of a food processor until smooth.

2. Add eggs/chia seed eggs + vanilla, pulse until combine.

3. In a medium bowl, whisk together flours, cacao magic powder, baking soda + salt. Toss in the chocolate pieces.

4. Add the flour mixture to the batter + pulse until just combined.

5. Drop by the scoop or spoonful onto parchment paper lined cookie sheets. Bake at 350 for about 10 min, or just until they start to set on the very edges of the cookie.

They will continue baking after you remove them form the oven.

Cashew Superfood Bar- vegan + paleo

Gather:

Do This: 

1. Mix everything except the philosophie superfoods in the food processor. If it's too wet, add a few spoonfuls cashew flour. If too dry, add 1-2 T water.

2. Mix again, adding all the Philosophie Superfoods (Green Dream, Berry Bliss + Cacao Magic) in food processor.

3. Press with fingertips into pan in parchment paper and place in fridge for 30 min or until tough. Remove from fridge and cut into bars or squares! 

 

 

The fresh texture is amazing:  supple and fine, but with crunch. You'll need to keep them refrigerated until you want to snack on them... you could bring them along as a snack but it will get crumbly after a few hours.
The taste is yummy with a sweet edge on a "wholesome" flavor.  But also nuanced-chocolatey.  There is a slight bitterness from the camu camu in the Berry Bliss Superfood blend and the goji berries and/or goldenberries.
(I love this flavor!  just so you know there's nothing wrong with the recipe if you taste the slight bitterness! You could omit the protein powder + just add honey or maple syrup so they aren't bitter at all if it bothers you.)

Breakfast Chia Seed Pudding

Breakfast can be tricky for me. I LOVE smoothies but don't always feel like taking the blender out. I get tired of eggs + try to avoid muffins, yogurt & processed cereals/granola so I have been searching for a really good healthy breakfast alternative + I have found it! I am so happy to share it with you, because it is so yummy + so simple! The addition of Green Dream adds extra protein + greens while the chia seeds are full of good omega fats! 

 


Chia seeds are an excellent source of protein, full of antioxidants, omega 3's, calcium + fiber.
In this recipe I soak them overnight in my homemade nut milk + add fresh fruit (berries are the best) in the morning for a 
yummy + nourishing breakfast.

I have tried many variations + found the 
best ratio, so the pudding has the perfect consistency:

  • 1 C of Almond Milk (or any tasty liquid you like, hemp milk, coconut milk etc.)
  • 3 T organic chia seeds
  • 1 t organic vanilla extract
  • optional sweetener (coconut palm sugar, honey, etc)
  • 1 T Green Dream
  • 1 T Berry Bliss
  • fresh fruit for topping

in a bowl combine 1 C of liquid with 3 T of chia seeds + whisk for about 2 minutes, then let sit for 4 minutes, when the seeds start to soak in the water + get a bit clumpy, whisk up again, wait a minute + then one more time stir it up, so you have already a nice liquid pudding. Fill into a bowl or mason jar + place into the fridge overnight. In the morning add your favorite fruit, Berry Bliss + Green Dream and optional sweetener! ONE LAST THING: You can prepare already a few mason jars with chia pudding and leave them in the fridge, they can be easily taken to work for a healthy snack and are perfect after a yoga practice. The chia pudding keeps well for about 3-4 days in the fridge.

Superfood Cookie Dough Bites

Rich and buttery coconut cream bites, with cacao nibs + Green Dream superfood powder! 

SUPERFOOD Cookie Dough Bites

makes ~ 16 balls or hearts
  • 1 C coconut butter
  • 1/3 C coconut nectar, maple syrup, agave or honey
  • 2 T Cacao Nibs
  • 1 T Green Dream superfood powder
  • OPTIONAL: add 1 scoop vanilla, raw, organic whey powder for extra protein. if you're using our protein be sure to take out half the sweetner above because there is stevia in the protein! You don't want it to become too sweet! 

Combine all of the ingredients in a bowl + knead the mixture by hand. Refrigerate until somewhat hardened, about 20 minutes.

 

 

Scoop out 2 tablespoons, roll into a ball by hand. Use coconut oil on your hands to make the rolling smoother, if necessary. Continue rolling to make the remaining balls.

If you have chocolate molds, use those instead of making balls. 

 

Store refrigerated until ready to eat.
