I am so honored to be doing a guest post here on Philosophie. I surely adore Sophie, she is a constant inspiration to me as a woman + a mama! Since I am obsessed with Sophie's products, I thought it'd be great to give you one of my favorite superfood smoothie recipes. I love to put either berry bliss or (and!) green dream in this one.

This recipe is inspired by my favorite smoothie from Active Culture Cafe in Laguna Beach.

BLUE GREEN ENVY SMOOTHIE

raw + vegan + gluten free + soy free
  • whole banana sliced + frozen
  • 1/2 C of frozen blueberries
  • 1 C of kale
  • 1 T of raw almond butter
  • 1 T of maca powder
  • 1 T of cacao nibs
  • 1 T of chia seed powder
  • 1 T of berry bliss and/or green dream
  • 2 C of almond milk [my recipe]

Oatmeal Superfood Cookies - Gluten-free, Vegan + Sugarfree!

Be Careful: these are HIGHLY ADDICTIVE. We can't quite put our finger on WHY they are so amazingly delicious... there's no sugar, nothing processed + no gluten. Something about the consistency + blend of flavors that just *POP* in your mouth. I had 5 for breakfast this morning with zero guilt + had to run out of the house so I would stop. Here we goooo! 

GATHER:
  • 1 3/4 All-purpose gluten-free baking flour (I like Bob's Red Mill)
  • 1 C Lucuma (or 1/2 lucuma, 1/2 vegan sugar if you're transitioning)
  • 1/2 C Gluten-free oats
  • 1 T Green Dream superfood protein powder 
  • 2 T ground cinnamon
  • 1/12 t xantham gum
  • 1 t baking soda
  • 1 t sea salt
  • 1 C melted coconut oil
  • 1/2 C unsweetened applesauce
  • 2 T vanilla extract
  • 3/4 C raisins, golden berries or goji berries

 

 

DO THIS: 

1. preheat the oven to 325. Line 2 baking sheets with parchment paper and set aside.

2. In a medium bowl, whisk together the flour, lucuma/sugar, green dream, oats, cinnamon, xantham gum, baking soda, and salt.

3. Add the coconut oil, applesauce and vanilla ans tir with a rubber spatula until a thick dough forms. Add the raisins/gojis/goldenberries and stir until evenly distributed. 

4. Drop the dough by the tablespoonful onto the prepared baking sheets, about 1 inch apart 

5. Bake for 8 min, rotate the baking sheets, and bake for an additional 7 min or until golden. Let stand on the baking sheets for 15 min before serving.

Halloween "Dirt" Superfood Cups! (Gluten-free & vegan)

These amazing superfood cups were created when I was playing around in the kitchen after making another recipe. They evolved because I wanted a super-rich, protein-filled, low sugar snack that also gave me energy. They ended up looking so "dirt-like" that I thought they were perfect for Halloween! 

Gather

2 C cacao nibs
1 1/4 t pink sea salt
3/4 C almond butter
3 T coconut oil (i love garden of life brand)
1 T liquid vanilla
2 scoops raw vanilla whey protein (omit if vegan)
1 t peppermint extract (optional)
1/2 t cayenne pepper (optional)

Do this

1. Finely grind the cacao nibs in a dry blender. 
2. Mix all ingredients by hand in a bowl until mixture is consistent. Should be super dry, barely able to stick together,  "dirt"-like.
3. Scoop out small amounts with a spoon and place into mini muffin paper liners. Pack down with fingers or back of spoon.

Storage

These babies will keep for at least 2 weeks! Make a bunch and treat yourself throughout the day instead of having coffee. These are PACKED full of superfoods, nutrients, energy + protein!

Cacao magic fudge - glutenfree, vegan, raw

I've been really missing my moms chewy, rich, homemade fudge. It was her grandmothers recipe + it left you feeling hung over + depressed because of the sugar rush. This recipe was an attempt to recreate the fudge satisfaction I so long for, without the downsides of having processed sugar + a crash. (bonus of being vegan, raw + gluten-free!)

 

Cacao magic fudge - gluten-free, vegan, dairy-free, paleo fudge

{gather this}

1 C Cacao Magic powder

1 C cacao butter

1/2 C cashew butter (or almond/peanut)

1 1/2 C liquid sweetener

1/4 t pink sea salt

1 T vanilla extract

1 T hazelnut or almond extract

 

{GARNISH}

chopped candied hazelnuts, goji berries, cacao nibs and/or candied walnuts

 

{ DO THIS }

Prepare 9" square cheesecake pan by greasing the sides with coconut oil and lining the bottom with parchment paper.

Blend all ingredients except candied hazelnuts until smooth. Pour into prepared pan. Add garnish. Put into freezer until fudge is solid. Serve at room temperature.

Superfood Protein Bars

This recipe is for the most delicious and nutrient-dense protein bars you could ever make.

I've been getting kind of grossed out lately when I eat store bought protein/energy bars. The fact that most of those bars (even the most healthy ones) can sit on a shelf for over a year and not sprout an inch of mold concerns me. That I could save one of the boxes until I'm a grandma and feed it to my grandkids is just not cool. Don't get me wrong, they are GREAT to have on hand in emergencies and I definitely store them in my diaper bag and car, I would just PREFER to feed myself and my family something more fresh and handpick the ingredients myself.

These bars aren't very sweet, in fact, the only thing they are getting any sweetness from is the stevia in the whey protein I use. If you want them a tad sweeter, I would add a local, organic, raw honey from the farmers market. Honey would taste amazing in these!

Gather:

Combine: (in food processor)

  1. Take the oats, sunflower seeds, goji berries and pumpkin seeds and grind in the food processor until they form a powder/flour.
  2. add the green dream, berry bliss and vanilla whey protein powder. pulse a few times.
  3. add the cashew butter, coconut oil and optional honey and mix until combined.
  4. test the consistency. If it's too dry to from into a ball then add 1/2 T cashew butter and 1/2 T coconut oil and mix again. if it's too moist add 1/2 T whey protein powder. When desired consistency is reached, press the mixture into the pan and flatten. Put the dish, uncovered, into the fridge for 30-60 minutes. Remove from fridge, cut into bars. Cover individual bars in foil/wrap or put a couple into plastic baggies. I've been doubling this recipe and making on Sunday's to have for the week for the family. It's the perfect snack on the go! We've been eating it for breakfast with fresh fruit :)

Note: keep the bars in the fridge. Don't remove until just before you're going to eat them. They get really crumbly and melt when they aren't refrigerated! 

Cacao Magic Truffles! Raw and Vegan!

ingredients:

  • 4 Medjool dates
  • 1/2 C almond meal (I get it from trader joes--much cheaper than any other brand)
  • 4 T coconut oil
  • raw cacao nibs and/or unsweetened coconut flakes for coating

directions:

Melt your coconut oil so it's completely liquid. In a food processor, mix the dates and almond meal. Then add half the coconut oil, green dream powder and cacao magic powder. Process til it's not powdery; add a few drops of coconut oil if it is. Next, add the protein powder, then process again. Add the rest of the coconut oil and stevia and process until it's a smooth thick consistency. If it's too powdery, add more coconut oil. When you get the desired consistency, take out of the food processor and put in a bowl. Here you can add any toppings you want- I usually do coconut shreds and/or cacao nibs or squish a few goji berries into the center.

Roll into balls and put into fridge over night or the freezer for one hour. Then pop them in your mouth for a delicious, healthy, superfood treat!

*If you just want a superfood snack/dessert and you aren't worried about protein necessarily, leave the protein out. It definitely adds a powdery taste (I don't mind it) so if it's for a dinner party or being served as something more decadent, add a little agave and leave out the protein powder.
