Easter Chocolates are HAPPENING. {raw, gluten-free, superfood versions!}

Easter Chocolate {gets an upgrade!}

 

I used to love Easter as a kid, but mostly because of the fun easter egg hunts + going through my easter basket! I'm so excited to give my kiddos HEALTHY treats that I won't feel terrible about later... no sugar rush, no yucky ingredients!

 

 

gather:

 

3/4 C coconut oil

3/4 C maple syrup

1 C  cacao magic powder

1/4 t pure vanilla extract

 

do this:

 

1. If coconut oil is hard/solid place it oil in a bowl. Then place bowl inside a BIGGER bowl that is filled with hot water so that it will melt. You just want to liquify the pure coconut oil for use in this raw chocolates recipe.

2. Mix all raw chocolates recipe ingredients together in a blender or with a whisk until smooth.

3. Place chocolate mixture in chocolate molds to be set in the freezer or pour into a small glass baking dish to set in the fridge until set.

4. If not using molds, then cut into bars instead. YUM!

I am so honored to be doing a guest post here on Philosophie. I surely adore Sophie, she is a constant inspiration to me as a woman + a mama! Since I am obsessed with Sophie's products, I thought it'd be great to give you one of my favorite superfood smoothie recipes. I love to put either berry bliss or (and!) green dream in this one.

This recipe is inspired by my favorite smoothie from Active Culture Cafe in Laguna Beach.

BLUE GREEN ENVY SMOOTHIE

raw + vegan + gluten free + soy free
  • whole banana sliced + frozen
  • 1/2 C of frozen blueberries
  • 1 C of kale
  • 1 T of raw almond butter
  • 1 T of maca powder
  • 1 T of cacao nibs
  • 1 T of chia seed powder
  • 1 T of berry bliss and/or green dream
  • 2 C of almond milk [my recipe]

Butternut Squash + Brussels Sprouts Gluten-free Stuffing

Butternut Squash + Brussels Sprouts GF Stuffing
Gather:
  • 1 pound butternut squash, cubed
  • 1 pound brussels sprouts, halved
  • 1 medium gala apple, cut into a 1/2 inch dice
  • 2 shallots, thinly sliced
  • 3 T olive oil, divided into 2 T + 1 T
  • 1 C onion, diced
  • 1 C celery, diced
  • 10 slices bread of choice: crusty sourdough, dry cornbread, whole grain, or, if you are gluten free, millet bread from Food For Life will work nicely. Prior to preparing the recipe, leave bread out for a day to become slightly dry, then cut into cubes.
  • 1 1/2 C low sodium vegetable broth (plus extra as needed)
  • 2 t fresh rosemary, chopped
  • t fresh thyme
  • t chopped fresh sage
  • 1/3 C dried cranberries or dried goji berries
  • 1/3 C pecans or walnuts
  • Sea salt + pepper to taste
DO THIS: 
  1. Heat oven to 400 degrees. Toss the squash, brussels sprouts, apples, + shallots in 2 T oil, season well with salt + pepper. Roast till vegetables are very tender (I actually like my sprouts a bit singed) and remove from oven. Reduce oven heat to 350.
  2. Heat other tbsp oil in a large pot. Sautee the onion + celery till translucent (about 5-8 min). Add the bread cubes and allow them to get golden brown with the veggies in the oil. Add a dash of salt and pepper.
  3. Add the roasted vegetables, vegetable broth, cranberries (or goji berries), pecans, + seasonings. Stir the mix till the broth has almost entirely absorbed in the toasted bread. Transfer to a baking sheet + bake at 350 for about 20 minutes. Serve hot. 

Superfood Cookie Dough Bites

Rich and buttery coconut cream bites, with cacao nibs + Green Dream superfood powder! 

SUPERFOOD Cookie Dough Bites

makes ~ 16 balls or hearts
  • 1 C coconut butter
  • 1/3 C coconut nectar, maple syrup, agave or honey
  • 2 T Cacao Nibs
  • 1 T Green Dream superfood powder
  • OPTIONAL: add 1 scoop vanilla, raw, organic whey powder for extra protein. if you're using our protein be sure to take out half the sweetner above because there is stevia in the protein! You don't want it to become too sweet! 

Combine all of the ingredients in a bowl + knead the mixture by hand. Refrigerate until somewhat hardened, about 20 minutes.

 

 

Scoop out 2 tablespoons, roll into a ball by hand. Use coconut oil on your hands to make the rolling smoother, if necessary. Continue rolling to make the remaining balls.

If you have chocolate molds, use those instead of making balls. 

 

Store refrigerated until ready to eat.
