Gluten-free, Dairy-free Green Dream Banana Bread

A friend just sent me this INCREDIBLE banana bread recipe with GREEN DREAM in it!  It's paleo, dairy-free, gluten-free and DELICIOUS! 

 

Adapted from Simply Recipes, thank you Beth for sharing and being creative with your superfoods! 

Green Dream Vegan Gluten-free Bread

Gather This

  • 4-5 ripe bananas (smashed)
  • 1/3 C coconut oil
  • 1/2 C sugar
  • 1 egg (beaten)
  • 2 T Green Dream powder
  • splash of vanilla
  • 1 t baking soda
  • pinch of salt
  • 1.5 C gluten free flour (blend of rice flour, almond flour + gluten free all purpose flour)
  • xanthan gum (quantity based on package instructions)

Do This

  • No need for a mixer (aaaaah!).  
  • Preheat oven to 350 degrees.  
  • Mix bananas and coconut oil then add sugar, egg and vanilla.  Sprinkle baking soda and salt over mixture and combine.  
  • Add flour + Green Dream; combine.  
  • Grease 4x8 loaf pan (I used 3 minis!) with coconut oil.  Bake loaf pan for one hour or minis for 45 mins.

Grain-free, gluten-free paleo double chocolate cookies

I made these grain-free, paleo + gluten-free cookies today + basically dropped dead after trying them. I can't begin to tell you how amazing they are... and even the kids + hubby were head over heels in LOVE! They are soft, pillowy, tasty + SO HEALTHY! I can promise you, there isn't a person in your life that won't adore these: health nut or not! The Cacao Magic superfoods in this recipe sets it apart from other recipes out there. Cacao Magic has energizing raw cacao, hormone balancing maca root, healing medicinal reishi + omega rich chia seeds. What are you waiting for?

 

place in a bowl of a stand mixer or in food processor:

  • 1/3 C coconut oil
  • 1/4 C blood orange juice or passion fruit juice
  • 1 C coconut sugar 
  • 3 dates

set aside:

  • 2 eggs (or to make vegan, 2 chia seed eggs)
  • 2 t vanilla extract

whisk together:

  • 1 C almond flour
  • 1/4 C coconut flour
  • 3/4 C cacao magic powder
  • 1 t baking soda
  • 1/2 t salt

set aside:

  • 1 C chocolate pieces/chunks (we like Enjoy Life brand)

 

DO THIS:

1. Blend together coconut oil, blood orange juice, sugar + dates in the bowl of a food processor until smooth.

2. Add eggs/chia seed eggs + vanilla, pulse until combine.

3. In a medium bowl, whisk together flours, cacao magic powder, baking soda + salt. Toss in the chocolate pieces.

4. Add the flour mixture to the batter + pulse until just combined.

5. Drop by the scoop or spoonful onto parchment paper lined cookie sheets. Bake at 350 for about 10 min, or just until they start to set on the very edges of the cookie.

They will continue baking after you remove them form the oven.

Guiltfree + Glutenfree Pecan Love Pie

Crust:

  • 2 C walnuts
  • 3 C of pitted dates
  • 1 C coconut flakes, finely ground
  1. Pit the dates yourself, extracting each pit and discarding.
  2. Add the dates, coconut flakes and walnuts to the food processor and mix on high until thoroughly mixed.
  3. Press the mixture into the bottom and sides of a pie tray. Set to the side.


Filling:

  • 2/3 C filtered water
  • 1 C raw pecans, soaked about 15 minutes
  • 1 C organic raisins
  • 1 T vanilla extract
  • 1 t nutmeg
  • 1 T green dream 
  • 1/3 C coconut butter melted or coconut oil
  • 1 t sea salt

4. Blend all the filling ingredients together in the blender until smooth.

5. Pour onto the crust of the tray, and garnish with fresh, raw pecans.

6. Set in freezer overnight, or for at least 2 hours before serving. Slice up and enjoy! Share your pretty pics on instagram, pinterest + facebook and tag me so I can see/ share the love! 

Cacao magic fudge - glutenfree, vegan, raw

I've been really missing my moms chewy, rich, homemade fudge. It was her grandmothers recipe + it left you feeling hung over + depressed because of the sugar rush. This recipe was an attempt to recreate the fudge satisfaction I so long for, without the downsides of having processed sugar + a crash. (bonus of being vegan, raw + gluten-free!)

 

Cacao magic fudge - gluten-free, vegan, dairy-free, paleo fudge

{gather this}

1 C Cacao Magic powder

1 C cacao butter

1/2 C cashew butter (or almond/peanut)

1 1/2 C liquid sweetener

1/4 t pink sea salt

1 T vanilla extract

1 T hazelnut or almond extract

 

{GARNISH}

chopped candied hazelnuts, goji berries, cacao nibs and/or candied walnuts

 

{ DO THIS }

Prepare 9" square cheesecake pan by greasing the sides with coconut oil and lining the bottom with parchment paper.

Blend all ingredients except candied hazelnuts until smooth. Pour into prepared pan. Add garnish. Put into freezer until fudge is solid. Serve at room temperature.
