1 acorn squash
2 cups quinoa
1 tbsp of Green Dream Superfood + Protein Blend
A handful of cremini mushrooms (sliced)
1 tsp garlic powder
Top: dried cranberries + Kite Hill Ricotta Cheese
Cut the acorn squash in half, scoop out insides and bake in the oven at 400℉ for 30min. While those are roasting, cook the quinoa with Green Dream, sautéed cremini mushrooms and garlic powder. Sprinkle Kite Hill Ricotta Cheese and dried cranberries. ENJOY!
