The Full Moon’s energy put me in a creative + experimental mood. I decided to whip up a Simple Mills SUPERFOOD cake with help from Kai + Leo. I’m absolutely in love with how it turned out and the flavor profile it created.
This is such a great recipe for a family party or date night. It uses Simple Mills Chocolate & Cake Mix which is amazing! This baking mix is not only super easy to make and cuts your cook/prep time in half (compared to making the cake from scratch) but also uses the best ingredients for your body. Yes, it’s still full of sweets but it also contains coconut sugar, almond flour and arrowroot. I’m all about balance and this cake mix makes it easy.
Loaded with Cacao Magic Superfood + Protein Blend, this cake is gluten-free, vegan, full of superfoods and mama approved!
Gather This:
1 box Simple Mills Chocolate & Cake Mix
3 large eggs OR chia eggs (vegan option)
1/3 cup high quality, mild flavored oil (such as grape seed)
1/3 cup water
3 tablespoons Cacao Magic Superfood + Protein Blend
1 tsp vanilla extract
1 Simple Mills Vanilla Frosting
Do This:
Preheat the oven to 350°F
Thoroughly grease two 6” round cake pans and set aside
In a large bowl, beat the eggs, then mix in the oil, water, and vanilla extract
Once those ingredients are thoroughly combined, stir in the Simple Mills Chocolate & Cake Mix and Cacao Magic Superfood + Protein Blend until the batter is smooth
Divide the batter evenly between the two prepared cake pans
Bake for 25-30 minutes, until a tester inserted into the center of one of the cakes comes out clean
Remove from the oven and allow the cakes to cool in the pans for about 10 minutes before removing from the pan and transferring to a wire rack to cool completely
Decorate with Simple Mills Vanilla Frosting, edible gold stars and food grade rose petals (available online or at specialty baking stores), or however you like!
