Let’s call it a steak night! Well, kind of. This scrumptious, roasted cauliflower dressed in a zesty Green Dream tomato sauce will totally hit the spot.
Cauliflower is an excellent blank canvas. You can steam or blanch it to keep its essential flavors intact, but by roasting or sautéing it, you can bring out its sweetness. Cauliflower will absorb the oil and seasoning, soaking up flavors much the way eggplant does. But it remains firmer. We’ve added Green Dream to a yummy marinara sauce for a little boost of plant-based protein, antioxidants, and of course, energizing superfood greens!
This is a super simple dish to prepare, and the sauce is a pure knockout. Trust me! This is the perfect family dish for all your backyard cookouts and gatherings.
1 head of cauliflower
1 jar of favorite marinara
1 tbsp nutritional yeast
1 tbsp harissa
1 tsp Green Dream
Salt + pepper to taste
Slice the head of Cauliflower vertically, like you are slicing bread. Place on a baking sheet in a preheated oven, 400 degrees. Drizzle EVOO, salt and pepper and roast for 15 or so minutes, each side. While your cauli steaks cook, combine marinara, harissa, and Green Dream in a pot on the stovetop and warm up. Place warmed sauce on a plate, add roasted cauli steaks, sprinkle Nutritional Yeast and more Green Dream or salt + pepper if you prefer!
