Since I’m still DEEP into the unpacking process and turning this house into a home, I’ve relayed on easy-to-make meals that don’t stress me out with the planning and preparation. I whipped up these muffins using Simple Mills Pumpkin Muffin & Bread Mix which is made from clean and healthy ingredients like almond flour, organic coconut sugar, pumpkin, arrowroot, organic coconut flour and organic spices. I also added in a hearty helping of Cacao Magic Superfood + Protein Blend, which is packed with plant-based protein, healing reishi mushroom powder, and antioxidant-rich raw cacao powder makes these muffins so nourishing that I don’t even have to keep track of how many my kids (or I) eat!
Make the Simple Mills mix as directed and add in Cacao Magic Superfood + Protein Blend. Spoon batter into a lightly greased or paper-lined muffin tin, filling each ⅔ full. Bake for 25-30min. or until a toothpick comes out clean at 350℉. Serve and enjoy immediately!
