I love a good breakfast, but when you’ve got several mouths to feed – including your own – cooking it can feel like a total chore. Because of this, I need a solid go-to breakfast option that doesn’t disrupt my important morning ritual and gives my body all of the nutrition it needs to get through my day. That’s why I love this simple recipe that meets all of my body’s needs, tastes great, and takes no time at all to prepare.
Baked Avocado Eggs are a staple of Paleo cooking that provides everything you need in a breakfast. All you do is slice an avocado lengthwise, remove the pit, and crack and egg in the cavity of each slice before throwing it in the oven. That’s it!
Both avocados and eggs have plenty of healthy fat to fill you up in the morning, and eggs are an excellent source of protein, the nutrient you need most after a night of rest. For an extra protein boost, I love sprinkling my avocado egg with Green Dream Savory Seasoning, which includes nutritional yeast and Green Dream Superfood + Protein Blend. Nutritional yeast is a fantastic and delicious source of natural protein, B vitamins, and crucial trace minerals like zinc and manganese, which is why I included it in the Savory Seasoning.
I also toss a few hemp seeds on the avocado when it comes of the oven. Hemp seeds are another awesome source of protein and healthy fats, with the extra benefits of minerals like potassium, iron, zinc, and calcium. They add a really nice nutty flavor to the avocado egg and have this chewy texture similar to chia or flax seeds.
Prepping this for the oven can take less than 1 minute and only needs about 15-20 minutes in the oven, depending on how you like the texture of your egg. That’s a perfect amount of time to do a short workout, meditate, put on your make up, or get your kiddos ready for school. Try it out for yourself and feel free to experiment with your favorite toppings!
Gather This:
2 medium eggs
1 ripe avocado
½ tsp Green Dream Savory Seasoning
Hemp seeds
Do This:
Preheat your oven to 425 degrees Fahrenheit. Slice avocado lengthwise and remove pit. Scoop out about 1 tbsp of avocado to create more room for the egg. Place avocado on a baking sheet flesh-side up (if the avocado tilts sideways, make a little stand out of aluminum foil to prop it up). Crack one egg into the cavity of each avocado half. Bake for 15-20 minutes. Remove from oven and season with Green Dream Savory Seasoning and hemp seeds. Let cool and enjoy!
