6 Winter Dinner Ideas for January

Now that we’re in the heart of winter, there’s nothing like a hot, home-cooked meal to gently wind down your day. Here are 6 wholesome dinner ideas created with Philosophie Superfoods (like Green Dream + Cacao Bee!) to ensure you’re getting in plenty of nutrients, while also savoring each + every bite!

 

1) Mexican Quinoa Stuffed Peppers Recipe

Gather This:

  • 4 large bell peppers
  • ¾ cup quinoa
  • 1 ¾ cup chicken broth (or veggie broth)
  • 1 can black beans
  • 1 onion chopped
  • 3 cloves of garlic
  • 2 teaspoons of cumin
  • 2 teaspoons smoked paprika
  • 1/4 teaspoon salt + pepper
  • 1 chopped jalapeño
  • juice of one lime
  • 1 can diced tomatoes
  • ½ tablespoon Cacao Bee Honey
  • cilantro, chopped (topping)
  • cotija cheese (optional topping)
  • salsa (topping)
  • guacamole (topping)

Do This:

Stir quinoa and broth together, bringing to a boil. Reduce heat to low and then simmer covered for 20 minutes (or until quinoa is light + fluffy)!

Preheat oven to 350 degrees. In a large skillet, add the olive oil, onion, garlic, and jalapeño, and cook for 5 minutes.

Add the tomato and lime juice and cook for another 5 minutes. Add the beans and cheese to the quinoa mixture and stir, combining all ingredients. Add 1/2 tablespoon of Cacao Bee Honey.

Half the peppers lengthwise and remove seeds, adding ½ cup of mixture per pepper. Top with cilantro and bake covered with foil for 35 minutes. Add more cojita cheese and bake for another 10 minutes or so until the cheese is lightly browned. Top with chopped cilantro, cotija cheese (if using), salsa, and guac of your choice!


2) Green Dream Chickpea Pasta

Gather This:

Do This:

Follow directions for cooking the pasta shells on the box.

While the shells are cooking, brown the ground turkey or beef (or vegan "beef"). Chop the garlic and onions and then cook the onion for 3 minutes on medium. Add garlic and cook for another 3 minutes.

Drain fat from the meat and combine the garlic + onion mixture with your favorite marinara sauce, with the Green Dream stirred in.

Combine pasta shells and sauce, add chopped basil + parmesan (if using), and enjoy!  

 

3) Spicy Sausage and Lentil Soup

Gather This:

  • 1 box of chicken broth (or veggie broth)
  • 1 onion, chopped
  • 3 cloves of garlic
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 package of lentils, already cooked (Trader Joe's has a great one)
  • 1 pound of spicy (or non-spicy for kiddos) sausage, browned in skillet and then drained (or vegan sausage)
  • 1 tablespoon of thyme,
  • 1 tablespoon of oregano
  • 1 tablespoon of Cacao Bee Honey
  • 1 teaspoon cumin
  • ½ teaspoon Green Dream Superfood + Protein Blend
  • ¼ teaspoon salt and pepper (to taste)

Do This:

Brown meat or vegan sausage in skillet, drain, and set aside. Meanwhile, chop onion, celery, carrots, and garlic. Cook carrots, onion, and celery together with olive oil for 5 minutes. Add spices, lentils, meat/vegan sausage, and chicken broth and bring to a boil. Let simmer for 15 minutes, top with Cacao Bee, and enjoy!

 

4) Pesto Turkey Burgers

Gather This:

For the Pesto:

  • ¼ cup olive oil
  • ¾ cup cashews
  • ½ cup pine nuts
  • 1 cup of basil
  • 2 tablespoons water
  • 1 tablespoon nutritional yeast
  • 1 teaspoon Green Dream Superfood + Protein Blend
  • 1 clove of garlic
  • 1 teaspoon sea salt
  • 1 teaspoon hemp seeds for seasoning
  • 1 teaspoon Bragg's organic sea kelp delight (optional)
  • 1 teaspoon garlic powder (optional) 

For the Turkey Burgers:

  • 1 pound of ground turkey (or vegan ground turkey)
  • Sprouted whole grain burger buns (these are my fave!)
  • Sliced mozzarella (or vegan mozzarella)

Do This:

Combine pesto ingredients in a high-speed blender. Form the ground turkey (or vegan turkey) into patties and grill for 4-5 minutes on each side, depending on your preference. Grill or toast the hamburger buns for 1 minute on each inside, add the cooked patty, sliced mozzarella, and top with pesto sauce!

 

5) Lemon Artichoke Foil-Wrapped Chicken

Gather This:

Do This:

Lay out one sheet of 12 x 12 foil per chicken breast or Chick'n and place them in the center with 3 stalks of asparagus for each packet.

Season with salt + pepper, oregano, garlic, and juice of ¼ of a lemon per chicken breast or Chick'n piece. Top with 3 artichoke hearts and ¼ teaspoon Green Dream. Then fold foil upwards like a present and double fold the ends to seal the packet.

Bake in a large baking pan, on 400 degrees for 35 minutes.

 

6) "Empty the Fridge" Coconut Curry Recipe

Gather This:

  • 4 cans coconut milk
  • 3 sweet potatoes
  • 1 parsnip
  • 2 cups carrots
  • 2 cups green beans
  • 1 cup snap peas
  • 1 medium white onion
  • 3 small squash
  • sea salt
  • black pepper
  • crushed garlic x 1 ½ teaspoons
  • fresh ginger 1 inch chopped
  • garam masala
  • turmeric
  • cumin
  • Bragg's sea kelp seasoning
  • curry leaves
  • 1 tablespoon Green Dream Superfood + Protein Blend

Do This:

Add all ingredients (vegetables, milk, then spices) to a crock pot and cook on high for approximately 4 hours. After your curry's cooked, add the Green Dream, serve up in your favorite bowl, and ENJOY!

Fall is all about getting creative in the kitchen. These Pumpkin Spice Macarons are seriously everything nice PLUS superfoods galore. They are a healthy, no-bake version of a fun dessert, but made easy without all of the prep work.


These bites of fall are super tasty and delightfully nutritious as they’re loaded with pumpkin, maple syrup, coconut oil, almond flour and our limited-time Fall Vibes Superfood Blend.

Fall Vibes Pumpkin Spice Macarons

Makes 24 small macarons


Gather This:

½ cup pumpkin purée

½ cup maple syrup

½ cup coconut oil

2 cups shredded coconut

1 ½ cup almond flour

1 tbsp Fall Vibes


Do This:

In a bowl, mix together pumpkin purée, maple syrup and coconut oil. Add in the coconut shreds and stir well. Add in almond flour and stir again. Add in Fall Vibes and give it one last good stir.

Using a cookie dough scoop, form macaroons of desired size. Set in freezer for 1 hour to harden. ENJOY!

Pumpkin Spice Oat Matcha Latte

Transform your go-to matcha latte into a tasty seasonal drink with Fall Vibes pumpkin spice superfood blend. This simple matcha latte is made in the blender with only a few ingredients and is a delicious way to enjoy a cup of matcha during the Fall season.


This recipe is also easily adaptable. You can adjust the level of sweetness, flavors or plant-based milk to taste. Play around with the recipe to make it yours and you can either make it iced or hot!

1 ½ cup oat milk or milk of choice

1 tsp matcha green tea powder

Sweetener to taste


Do This:

Add all the ingredients to a high-speed blender. Blend until smooth and creamy. Taste and adjust the spices and sweetness as needed. ENJOY!!

Blissful Rose Superfood Latte

Infuse a little bliss and luxury into your day with this Rose Latte. This caffeine-free drink is perfect for any time of day and full of a ton of superfoods and a touch of cinnamon and rose petals for extra beautifying properties. When you prepare the drink, because of the rose petals, it will have anti-inflammatory properties and help to aid digestion as well. A Rose Latte is pink, gorgeous, delicious, and good for you.

Superfood Rose Latte

Gather This:

1 tbsp rose petals

½ cup of your favorite milk

¼ teaspoon of beetroot powder or 1 beet

1 tsp of maple syrup

Do This:

Blend all ingredients in the blender and warm up on the stove top. Sprinkle with dried rose petals to treat yourself to a majorly yummy, high vibe and anti-aging latte.  We’re all about those beauty foods!

Our Philosophie style granola bars are perfect to pack in kid lunches or for your mid day pick me up!! These TRULY AMAZING homemade granola bars are made with our Philosophie Berry Bliss Superfood Blend, berries, almonds and other goodness. 


Berry bliss includes amazing, HIGHLY nutritious ingredients (camu-camu- the highest antioxidant fruit in the world, acai, goji, pomegranate, mangosteen and sprouted brown rice protein). A snack that will give you the long-lasting energy and vitality to continue through your day! You all are already beautiful, but maintain your beauty from the inside out with the right superfoods!

GATHER THIS:

1 ½ cup plain granola

½ cup sliced almonds

½ cup sunflower seeds

½ cup dried berries 

1-2 tbsp Berry Bliss

¼ cup Berry Bee Honey

Cinnamon

optional additions: chocolate chips, other dried fruit, banana chips, vanilla, etc.


DO THIS:

Mix everything in a bowl except the honey and cinnamon. Once thoroughly mixed, transfer to an 8×8 dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. (A loaf pan might work, but will yield thicker bars.) Press down until uniformly flattened. Cover with parchment or plastic wrap, and let sit in the fridge or freezer for 15-20 minutes to harden. Drizzle with Berry Bee Honey and sprinkle with cinnamon. Remove bars from pan and chop into 10 even bars. Store in an airtight container for up to a few days.
