This New Year’s Eve, we plan to stay in and keep things really simple, but that doesn’t mean we won’t be enjoying a beautiful cocktail as we toast to the end of one amazing year and the beginning of another. There is something about a glass of champagne or sparkling wine that feels so festive, and adding some fresh fruit puree to create a Bellini can make a simple glass of bubbles feel even more special. Bellinis are classically made with peach puree or nectar, but I love switching things up and using other fresh, seasonal fruits! These Blackberry Bellinis are so easy to make, have the perfect balance of tart and sweet flavors, and will add a touch of elegance to our last evening of 2014!
Gather This:
- Prosecco sparkling wine, chilled
- Handful of blackberries
- Rosemary for garnish
Do This:
Place 3-4 blackberries in a small, sturdy glass and muddle until berries have been mashed into a thick pulp. Spoon mashed blackberries into bottom of champagne glass. (You will need a long thin spoon to do this neatly if your champagne glasses are narrow.) Fill with champagne and garnish with several blackberries skewered on a rosemary sprig. Not a fan of blackberries? Pomegranate seeds would also look beautiful dancing in your glass of bubbles!
