Summer is HERE! We actually tend to eat popsicles year round as an easy treat that packs in the nutrients. We give it to the kids after dinner in the bath, which doubles as an easy clean-up plus a sneaky nutrient boost for the kids prior to bed. We do SO many variations so I wanted to share a few fun ones here with you!
Tips:
1. Depending on your popsicle mold, you may need to run warm water over the mold for a few seconds until the popsicles easily slide out. These pops can be stored in a sealed bag in the freezer for up to 2 weeks.
2. If you don’t have pop molds, simply use dixie cups or regular cups with a straw in the middle. Easy peasy!
BREAKFAST POPS
it's too hot to eat breakfast. Have breakfast in a popsicle instead!
- 2 C almond mylk or other non-dairy milk
- 1 banana, frozen
- 1 t vanilla
- 1 T maple syrup
- 1/2 C blueberries, fresh or frozen
- 1/3 C superfood granola
Do This:
- Blend together almond mylk, vanilla, maple syrup + banana in the bowl of a blender or food processor. Fold or stir in superfood granola + blueberries. I chose not to blend the granola + blueberries in in order to maintain the chunks of the goodness.
- Pour into popsicle molds, make sure not to overfill. Freeze for at least 2 hours.
Berry Bliss Pops
- 1.5 C fresh raspberries
- 2 T berry bliss superfood + protein powder
- 1 can full fat coconut milk
- Juice of one lime
- 2 t pure vanilla extract (optional)
- 1/4 pure maple syrup / superfood honey
Pour entire contents of coconut milk into a blender along with the vanilla, berry bliss superfoods, lime juice + maple syrup or honey. Blend well until mixture is smooth. Add whole raspberries + blend for a few seconds more. Longer if you want your popsicles smooth, or blend for a shorter time if you want visible fruit chunks.
Easy Superfood Pops
When I'm feeling lazy I'll just mix coconut water with the superfoods and put into popsicle molds. This was coconut water with the pulp + berry bliss powder.
Chocolate Avocado Fudgecicle
- 2 large, ripe avocados
- 2/3 C Cacao Magic powder
- 1 T Green Dream
- 1 C leafy greens (easy way to sneak in greens for kiddos!)
- 1/2 C agave nectar/superfood honey/maple syrup
- 1 t vanilla extract
- ~1/4 C water or coconut water
Use a mixer to blend together the avocados, cacao magic powder, sweetener of choice, vanilla extract, + H20. Blend until light and fluffy – if too thick then add a little more coco H20/water. Divide among popsicle molds and let set in the freezer until frozen.
Green Dream Pops
- 1 large, ripe avocado
- 1 banana, ripe
- 2 T Green Dream powder
- 1 C leafy greens (spinach is the most mild)
- 1/2 C agave nectar/superfood honey/maple syrup
- 1 t vanilla extract
- ~1/4 C coconut water
