Hazelnut Cake Day Recipe

I ABSOLUTELY LOVE chocolate. Can’t get enough of it, ever. I’m also a fan of the oh-so-addicting Nutella, and of course, my two little boys are too. So when I found out about national Hazelnut Cake Day, I knew that I had to whip up a recipe for all of us to enjoy.

But much as eating an entire cake layered with chocolatey goodness and hazelnut flavor sounds, I had a feeling that having a bunch of “tiny” cakes would make it a bit easier to control my impulses, and also avoid an intense gut ache.

So making cupcakes seemed like the perfect solution! Perfect for getting a nice little chocolate fix, and not overwhelming!

Each individual treat has a nutella-cake base, and a Cacao Magic frosting. The cacao is nutrient-rich + loaded with minerals like iron, potassium and magnesium… and by incorporating it into an icing, you get to indulge and nourish your superfoods at the same time.

It’s definitely a decadent combo, but it’s one that you can still feel good about too!

Gather This:

For the Cupcakes

  • * 3 eggs
  • 1 cup gluten free flour
  • ¾ cup nutella, or hazelnut spread
  • ¾ cup nut butter

* substitute flax eggs or chia eggs for a vegan option

… For the Frosting

Do This:

1. Preheat your oven to 350. Add your eggs into a mixing bowl and whisk for 1-2 minutes, then add the remaining ingredients and mix until everything is incorporated.

2. Pour your batter into a cupcake pan (liners are optional), and bake for 11-14 minutes.

3. While the cupcakes are baking, add all of your dry frosting ingredients into a small bowl. Then add the vanilla, and slowly add your milk. Whisk or beat until fluffy! And you can always add a little extra milk if the mixture is too thick, or a little extra Cacao Magic if it is too thin.

4. Remove your cupcakes from the oven, and let them cool. Then add your frosting, and devour!

Honey-Drizzled Rosemary Fig Toast

We’re sharing one of our favorite toast recipes that’s creative & delicious, while not being too overly sweet. After spreading ghee onto a slice of gluten-free toast and topping it with Cacao Bee Honey, figs, bee pollen, and berries, add a sprig of rosemary to add a lovely pine taste, along with a calming aroma!

Besides helping you ground down and easing any anxiety, rosemary also stimulates the immune system, boosts circulation, and promotes healthy digestion. This high-vibrational herb also pairs beautifully with the figs, which nourish the intestines and support healthy digestion due to their high amounts of fiber. This sweet, chewy fruit is also rich in potassium, which helps lower blood pressure.

While this delectable toast makes for a flavorful brekkie that'll definitely awaken your taste buds, it also works as a wholesome snack that'll help chase away any midday stress that's built up!

Gather This:

1 slice of gluten-free toast

2 figs, sliced

1 sprig of rosemary

1 tbsp bee pollen

1 tsp Cacao Bee Honey

1 handful blueberries

1 tsp ghee (coconut oil or butter also work)

handful of mulberries

Do This:

Toast your bread and spread on the ghee. Slice fig, place on the toast, and drizzle with the honey. Top with sprinkles of bee pollen, blueberries, rosemary and mulberries.

Gluten-free Holiday Spiced Pancakes

The holidays are all about eating tons of nourishing, beautiful food and celebrating with friends and family. This is a beautiful time to shift into slow mornings together with stacks of these buttery pancakes topped with superfood honey.

This recipe is insanely simple because of Bob Red Mill’s Gluten-Free Pancake Mix. I also subbed in almond milk and coconut oil instead of regular milk + oil (it’s THAT easy to make healthy substitutions). Finally, I added a touch of our Fall Vibes Superfood Blend (limited supply left in stock!) for the pumpkin flavor because I’m obsessed and topped with our Berry Bee Honey instead of maple syrup which makes this stack extra sweet and extra nutritious! Perfect for the family to enjoy.

These cakes were so thick and tasty - you're going to want to make them all week long!

Gather This:

1 cup Bob’s Red Mill Gluten-Free Pancake Mix

1 tbsp coconut oil

1 egg

¾ cup almond milk (or milk of your choice)

1 tbsp Fall Vibes Superfood Blend

Drizzle of Berry Bee Honey

Do This:

Heat a lightly greased pan over medium heat. Mix all ingredients in a bowl until just combined and then pour ¼ cup portion into pan. Cook until bubbly, then flip and cook until done, about 2-3 minutes per side. Serve while hot and top with a drizzle of Berry Bee Honey and your favorite granola.

Dark Chocolate Peppermint Mocha Muffins

Celebrating all the holiday goodness with these gooey, dark chocolate peppermint mochas made by our love Carmen Jolie (@carmenjolie)! Each muffin is cakey, rich and full of only the good stuff. This recipe includes our Coconut Magic Coconut Butter as a creamy, nutritious substitute for butter and Cacao Magic for vitamins, adaptogens and plant-based protein.

Gather This:

2 cups AP flour or sub GF flour

¾ cup unsweetened cocoa powder or Cacao Magic

2 ½ tsp baking soda

1 tsp baking powder

½ tsp salt

½ cup granulated or coconut sugar

2 triangles of finely chopped Abuelita’s hot chocolate bar (this adds a sweet cinnamon surprise)

2 eggs (beaten)

1 ¼ cup almond milk

¼ cup coconut oil melted

¼ cup Coconut Magic Coconut Butter, softened

1 tsp vanilla extract

1 candy cane crushed to sprinkle on top before baking as well as dark chocolate chips to add on top before baking

Do This:

Whisk dry ingredients together in a large bowl. In a separate bowl mix beaten eggs, almond milk, vanilla extract and melted coconut oil + softened coconut magic butter. Mix dry and wet ingredients slowly, don’t make a mess! Put in lined muffin tins and fill to the top generously. Top with dark chocolate chips and crushed candy cane pieces. Bake at 350 for 15-20 min or until cake is cooked all the way through (all ovens are different)

Peppermint Collagen Hot Chocolate

The holiday season is all about celebrations with friends and loved ones surrounded by good food. What we nourish our bodies affects our health and mood; when we nourish ourselves with real food and lovingly enjoy a holiday treat we are more likely to maintain bliss and balance.

No need to deprive yourself and definitely no need for judgment or guilt, especially when you incorporate high-vibe superfoods into your holiday treats!

This rich, minty hot chocolate gets its smooth texture from highly nutritious nut milk and its subtle sweetness from immunity-boosting honey. We’ve added our Cacao Magic blend for a variety of potent superfoods, including a dose of finely milled reishi mushroom powder, known to have an ever-growing list of healing properties. And a boost of our Cosmic Elixir for collagen and superfoods.

Gather This:

1 cup non-dairy milk

½ cup water

3 tbsp Cacao Magic or raw cacao

1 ½ tbsp sweetener of choice

A small pinch of salt

¼ tsp peppermint extract

1 tsp Cosmic Elixir

1 ounce of chocolate ( raw, vegan carob will also work)

Do This:

Blend all of the ingredients together, except for the chocolate. Pour the liquid into a small saucepan, add the chocolate and slowly bring to a simmer over medium heat. Whisk in the chocolate. Simmer for another minute or so, keeping an eye on the chocolate to make sure it doesn’t burn. Remove from heat. Enjoy warm or chilled (wine glass over ice)!
