Toast Tuesday: Roasted Brussels Sprouts Toast

It’s another Toast Tuesday! If you love brussels sprouts as much as I do, you’re going to be head over heels for this savory toast recipe. After readying up a slice of my favorite gluten-free bread, I spread on my go-to Green Dream Hummus, and then layer on the brussels sprouts. To get them ready, I drizzle on extra virgin olive oil, season with salt and pepper, and then roast them up in the oven so that they pair AMAZINGLY with the supercharged hummus.

I especially like eating brussels sprouts on the reg, since this Belgian fave (yep, it’s named after the city!) is packed with iron, protein, antioxidants, vitamins, potassium, and fiber AND lowers your risk of developing obesity, diabetes, and heart disease. Layered on top of this toast, they make for a super satisfying and filling lunch to power you through the afternoon!

Coat half of the brussels sprouts in extra virgin olive oil and salt and pepper and then roast on a baking sheet in the oven on 400 degrees for 20 minutes. Spread the hummus on the toasted bread, top with the sprouts, and enjoy!
