3 Easy Breezy April Dinner Recipes

Now that we're in the midst of the new spring season, it's the perfect time to revitalize and restore our bodies + spirits. An oh-so-yummy way to do so is by infusing your dinners with Green Dream – our detoxifying blend of spirulina, maca, mesquite, hemp powder, chia seeds, and vanilla. Whether you're doing a Philosophie Spring Cleanse or just want to cook up a simple + nourishing supper (that will also make a great next-day lunch!), try preparing these easy breezy Superfood Tofu Fingers, Sweet Potatoes, or Chickpea Pasta!

Green Dream Tofu Fingers

Gather This:

Do This:

Preheat your oven to 375. Lightly grease your sheet pan with a non-stick oil, like coconut oil. In one bowl, beat the two eggs. In a separate bowl, mix the almond flour, Green Dream, and salt and pepper.

Take an individual piece of tofu (or chicken), dip it in the egg mixture on both sides, and then dip in the almond flour mixture, so that it is completely coated. Place on a baking sheet. Repeat until you are finished with the tofu (or chicken).

Bake in the oven for 11 or 12 minutes per side, totaling around 23 or 24 minutes. Serve with your favorite dipping sauce + green salad!


Cilantro + Tahini Roasted Sweet Potatoes

Gather This:

  • ¾ cup tahini
  • 2 cloves garlic
  • juice of one lemon
  • ¼ cup water
  • 1 teaspoon Green Dream Superfood + Protein Blend
  • coconut oil
  • salt + pepper to taste
  • bundle of organic cilantro
  • 4 large sweet potatoes

Do This:

Preheat oven to 400. Rinse the potatoes, pat dry, poke with a few holes, and roast in the oven for 1 hour. While the potatoes are roasting, make the tahini sauce. Combine all of the above ingredients in a high-speed blender or food processor, pulsing until creamy. Take the potatoes out of the oven once they’re cooked, and cut in half lengthwise. Spread apart, drizzle with dressing, and top with chopped cilantro.This would also go great with any protein, but is also a filling meal in itself!


Spinach Leek Chickpea Pasta

Gather This:

  • 1 box of Banza Chickpea Pasta
  • 1 bag of organic spinach
  • 1 pound wild-caught shrimp (optional, or sub with tempeh)
  • ½ onion, chopped
  • 3 cloves of garlic, chopped
  • 1 leek, chopped
  • 1 teaspoon Green Dream Superfood + Protein Blend
  • parmesan
  • extra virgin olive oil  
  • salt + pepper to taste
  • brass-fed butter

Do This:

Cook pasta according to instructions and set aside. In a large skillet, cook shrimp (if using, or tempeh) with 1 teaspoon of butter for 5 minutes on medium heat, stirring often. Put in a separate bowl once it’s done cooking. Chop all vegetables. In a skillet on medium heat, add 1 tablespoon of butter, and cook the onion and leek for 5 minutes. Add the garlic and stir occasionally for another 3-4 minutes. Combine all ingredients, including the pasta, shrimp (if using, or tempeh), and veggies. Sprinkle with Green Dream, and as much parmesan, salt, and pepper as you desire. Stir well + enjoy!
